Anyone Heard of Chorizo?
Hi again! I recently made one of my many favorite breakfasts - Chorizo with potatoes, over easy eggs, hot corn tortillas and tomatillo chile! What a super delicious meal this is! It is fairly easy to make as well! Chorizo is a Mexican sausage (either in a casing or loose) and is different looking and tasting than most sausages. It is made from various cuts of pork meat and seasoned with numerous Mexican herbs and spices which makes the meat turn a shade of red. It is however, very delicious! I wanted to share this recipe with you!
Chorizo con Papas (Chorizo with Potatoes)
- 1lb chorizo, casing removed
- 1/2 yellow onion, chopped
- 1 Roma tomato, chopped
- 1 jalapeno, chopped
- 1 tsp. cooking oil
- 3 large potatoes, peeled and chopped
- corn tortillas or bread for toast
- hot sauce
- salt and black pepper to taste
Put the cooking oil in a skillet over medium high heat. Add in the chorizo and break apart with a wooden or bamboo spatula. Cook and continue breaking the chorizo up until slightly browned. Add in the onions, jalapeno and tomatoes. Mix well and continue cooking until the onions, jalapeno and tomatoes break down. Remove the chorizo mixture to a bowl leaving most of the red grease in the skillet. Add in your potatoes and skillet fry like hashbrowns. Add the chorizo mixture back into the skillet and mix well with the potatoes.
In a separate skillet add a little cooking oil and fry your eggs to your liking (over easy, sunny side up, well done, whatever)! Place some of the chorizo potato mixture on a serving plate and top with the eggs or place them alongside. Heat the tortillas or make some toast as well. I like to serve mine with tortillas and tomatillo chile (hot sauce).
