There is nothing better than a nice tasting healthy salad, In todays world more people are looking for ways to eat more heaither and salads are one of the ways for serveral reasons one being when you make a salad your using less meat than you would eat if you were eating a traditional meal when your eating a salad you are eating a group of ingredients that are combined together, plus when making a tasty salad you can pair anything that your taste buds desire ......thats right anything you want ...So what I am doing is making a tasty chuncky curry chicken salad.

By using a some fresh ingredients and like bonless chicken breast and some fresh vegetable you can have a nice healthy salad with and freshly made curry sauce added to make the ultamite curry chicken salad ....So follow me as I put this recipe together theyou can come back with your comments on how much you really love it.....Happy Eating.

Chunky Curry Chicken Salad

ingredients

4 whole boneless chicken breast

2 cups of water

1 medium onion, sliced

2 stalks of celery with leaves, sliced

11/2 teaspoon of accent

1 teaspoon of sea salt

1 teaspoon of white pepper

Put chicken breasts in saucepan; add water and remaining ingredients. Bring to a rapid boil, cover tightly. Reduce heat and simmer 30 minutes. Remove from heat; strain broth and refrigerate for later use. Remove skin from breasts; cut meat in bite-size chunks; Place chicken in the refrigerator to chill....While the chicken is cooling lets start with the fresh Curry Sauce.

Curry Sauce

3/4 cup of sour cream

1/3 of cup mayonnaise, i use hellmans .

1 tablespoon of chili sauce

1 tablesppon of lemon juice from a fresh lemon

1 tablespoon of curry powder

Chopped Italian parsley

Combine sour cream and mayonnaise; add chili sauce, lemon juice and curry powder; blend. Add chicken chunks to the sauce and marinate 1 hour. To serve, sprinkle with chopped parsley.

You can serve this on any type of bread or crackers or even on a bed of lettuce with some tomatoes on the side either way your going to love it .
