Cilantro Shallot and Lime Vinaigrette with Tossed Romaine Salad

I created this vinaigrette dressing recipe to serve with some of my Mexican dishes. It is very fresh tasting and works very well with chopped romaine lettuce. It makes an excellent side for enchiladas, fajitas, burritos and tacos.

What you will need for the vinaigrette are about one tablespoon of mustard, one shallot, one bunch of cilantro, the juice of one lime, and about two cups of olive oil.

Chop the cilantro and shallot into small enough pieces for the food processor to handle. Puree them along with the lime juice and mustard until everything is well blended. Slowly drizzle in the olive oil until the vinaigrette thickens to the right consistency.

Use a mixing bowl to toss the chopped romaine with the cilantro shallot vinaigrette adding any other vegetables you choose (I would avoid using onions as the vinaigrette has a fairly strong shallot taste).
