Cinnamon Toast Mmmmm Delicious!

Cinnamon toast is a warm, comforting and delicious breakfast meal or snack. For those who are busy and on the go it is the ideal snack as it is quick and easy to make.

I remember as a kid my mum sprinkling cinnamon and demerara sugar on our toasts before going to school, it was so tasty. She knew about the benefits of cinnamon. As a child in the Caribbean, mum said that it was a tradition to useb spices like cinnamon and nutmeg in cooking and for relieving various ailments.

In today's society however, parents sadly fill their children with commercial products, spreads and cereals that contain all sorts of preservatives, flavorings devoid of any nutritional benefits.

But you can change that and try the sweet, aromatic spice, cinnamon and enjoy a healthy snack.

Cinnamon & Benefits to Type 2 Diabetics

Researchers at the USDA's Beltsville Human Nutrition Research Center in Maryland discovered that the wonderful sweet spice cinnamon can be used to reduce the amount of insulin needed for type 2 diabetes,.

They found that it made cells more responsive to insulin, which in turn lead to better glucose control. At work is a compound called methylhydroxy chalcone polymer which makes cells absorb glucose faster and convert more easily into energy.

By using just half a teaspoon a day sprinkled on toast, cereal or yogurt, or fruit has been shown to help regulate blood sugar levels.

Soaking cinnamon sticks in tea or coffee is a really good method of consuming cinnamon to combat Type 2 Diabetes.

Try These Cinnamon Toast Recipes

Cinnamon & Sugar Toast

Ingredients:

  • 2 slices white or wholemeal bread
  • Cinnamon mix (4 tsps cinnamon + 1/2 cup demerara sugar)
  • Butter

Method:

Make the cinnamon mix first by combining 4 heaped teaspoons of cinnamon and 1/2 cup demerara sugar (you can use white granulated sugar if you prefer) and add to a spice shaker for ease of use.

Toast the bread until golden brown and spread with butter.

Whilst toast is hot sprinkle the cinnamon mix on the toast,spreading the mix on the butter.

Now enjoy, yummy!


Cinnamon & Honey Toast

Ingredients:

  • 2 slices white or wholemeal bread
  • Cinnamon mix (2 tsps cinnamon + 1/2 cup demerara sugar)
  • Butter

Method:

Make the cinnamon mix first by combining 2 heaped teaspoons of cinnamon and 1/2 cup honey(you can use maple syrup if you prefer) and add to a bottle container for ease of use.

Toast the bread until golden brown and spread with butter.

Whilst toast is hot spoon on the cinnamon mix on the toast,spreading the mix on the butter.

Cinnamon & Banana Toast

Ingredients:

  • 2 slices white or wholemeal bread
  • Cinnamon mix (2 tsps cinnamon + 1/4 cup demerara sugar)
  • 1 Ripe Medium Banana
  • Butter

Method:

Make the cinnamon mix first by combining 3 heaped teaspoons of cinnamon and 1/4 cup sugar (you can use white sugar if you prefer) and add to a spice shaker for ease of use.

Toast the bread until golden brown and spread with butter.

Whilst toast is hot sprinkle on the cinnamon mix on the toast, top one slice of toast with chunky slices of banana and cover with the other slice.

Cinnamon Toast for Diabetics

Ingredients:

  • 1 large egg
  • 1/8 cup fat-free skim milk
  • 1/8 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1 tbsp sweetner (canderell or stevia)
  • 2 slices bread (wholemeal or multi-grain)
  • Butter-flavored cooking spray

Method:

1. In a small bowl, whisk the egg, milk, vanilla, sweetner and cinnamon. Dip each slice of bread in the egg mixture to coat one side, turn over with a fork and coat the other side.

2. Generously spray large nonstick skillet coated with cooking spray and warm over medium heat until hot, add the slices of bread and cook until golden, turn over, and continue cooking until both sides are golden.

Cinnamon Drinks

Cinnamon drinks are very warming drinks and can be used for various ailments. For example; Cinnamon and honey has been noted as an aid to weight loss, it also increases circulation, helps prevent and soothes colds and flu, eases digestive problems such as indigestion and cramps. So as you can see cinnamon has a number of health benefits.

NB: * In the recipes below you can replace the stick of cinnamon with a teaspoon of ground cinnamon, but you will have to remember to strain the mxture. Some people find that the ground cinnamon irritates their throat.


Cinnamon & Honey (Good for weight loss)

  • Break a stick of cinnamon into a cup of boiling water.
  • Stir and cover to steep for half an hour.
  • Strain any particles through a filter and add a teaspoon of honey.
  • Drink it in the morning on an n empty stomach about half an hour before breakfast.
  • **(Ground cinnamon may be preferable in this recipe)



Spiced Cinnamon Drink

Ingredients:

  • 3 cups water
  • 2/3 cup light brown sugar
  • 2/3 cup dark brown sugar
  • Juice of 1 lime
  • Pinch of salt
  • 3 whole cloves
  • 4-6 cinnamon sticks
  • 1/2 cup orange juice

Method:

Add the water, sugar, lime juice, salt, cinnamon sticks and cloves to a pan and bring to the boil. Once boiling turn down the heat and simmer for 5 to 10 minutes.

Next, turn off the heat and add the orange juice.

Reheat, without boiling for 3 minutes.

Strain and serve hot.

NB: To make this drink even spicier you can add 4fl oz of spiced rum. It gives an extra kick!



Cinnamon Milk (very warming on a winter's night and good for insomnia)

Ingredients:

  • 6fl oz full fat milk (use semi-skimmed or fat free if dieting)
  • 1 cinnamon stick or 1tsp ground cinnamon
  • 1 tbsp sugar (Diabetics should use a sweetner)
  • 1/4 tsp vanilla extract

Method:

Add milk, cinnamon and vanilla extract to a pan and bring to the boil and turn off heat.

Pour milk into a cup, add sugar or sweetner, stir well to dissolve the ground cinnamon and serve.
