Campbell's Green Bean Casserole History

This classic green bean casserole recipe has been gracing Thanksgiving tables for over 50 years. Campbell's Green Bean Casserole recipe was developed in 1955 by Dorcas Reilly, a home economist at the Campbell Soup Company.

The original recipe used canned green beans, playing into the convenience food craze of the 1950s. Campbell's has since updated the recipe to use fresh cut green beans, and has a Healthy Choice Cream of Mushroom Soup to align the recipe with the nutritional concerns of the 21st century. The techniques for preparing the recipe are the same, whether you use the traditional or modern ingredients.

Original Green Bean Casserole Recipe Ingredients

  • 1 can (10 3/4 ounces) Campbell's Condensed Cream of Mushroom Soup
  • 1/2 cup whole milk
  • 1 teaspoon soy sauce
  • Dash ground black pepper
  • 2 14.5 oz. cans of French cut green beans, drained
  • 1 1/3 cups French's French Fried Onions

Modern Green Bean Casserole Ingredients

  • 1 can (10 3/4 ounces) Campbell's Condensed Cream of Mushroom Soup (98% Fat Free or Healthy Request)
  • 1/2 cup skim milk
  • 1 teaspoon low-sodium soy sauce
  • Dash ground black pepper
  • 4 cups cooked fresh green beans, cut into 1-inch pieces
  • 4 shallots, sauteed until golden in 1 tablespoon olive oil
  • 2/3 cup French's French Fried Onions

How to Make Green Bean Casserole

  • Preheat oven to 350 degrees Fahrenheit.
  • Set aside 2/3 cup French Fried Onions for topping
  • Whisk together soup, milk, soy sauce, and pepper to make the sauce.
  • Toss vegetables (canned green beans or fresh green beans and shallots) with sauce in a 1 1/2 quart casserole dish.
  • Bake casserole for 25 minutes, until the mixture begins to bubble around the edges.
  • Stir the mixture, and sprinkle with reserved 2/3 cup French Fried Onions.
  • Bake for 5 more minutes, until onions begin to brown.
