Have a wicked party with some cocktails at hand, add sparklers and umbrellas to give your party that tropical image.

Cocktails are extremely popular at all venues and having this dash of color always makes for memorable evening. To make sugar syrup, please see note at foot of page.

Zombie

Ingredients

6 crushed ice cubes, 2 measures dark rum, 2 measures white rum, 1 measure golden rum, 1 measure triple sec, 1 measure lime juice, 1 measure orange juice, 1 measure pineapple juice, 1 measure guava juice, 1 tbsp grenadine, 1 tbsp orgeat, 1 tsp Pernod

Method

Put the crushed ice into a blender, pour in the rums, triple sec, lime juice, pineapple juice, orange juice, orgeat, grenadine, Pernod and guava juice. Blend until the drink is very smooth. Do not strain, pour straight into large tall glass and decorate with pineapple and mint sprig.



Margarita

Ingredients

Lime wedge, 5 ice cubes, 1 measure triple sec, 2 measures lime juice, 3 measures white tequila, coarse salt

Method

Rub the lime wedge overt he rim of a cocktail glass and dip into the salt. Put the ice into a cocktail shaker, pour over the tequila, triple sec and lime juice, continually shake until a frost appears, strain into cocktail glass, decorate with the wedge of lime and enjoy.



Acapulco

Ingredients

10 ice cubes, 2 measures white rum, 1/2 measure lime juice, 1/2 measure triple sec, 1 egg white, 1 tsp sugar syrup

Method

Put the ice cubes into a cocktail shaker, pour over the triple sec, lime juice, sugar syrup, and the rum, then add the egg white, shake very hard until a slight frost is formed. Half fill a tumbler with ice and strain the drink into the glass, decorate with a sprig of mint.



Frozen Daiquiri (an excellent cocktail recipe for summer evenings)

Ingredients

6 crushed cubes of ice, 1 measure lime juice, 2 measures white rum, 1 tsp sugar syrup

Method

Put into a blender the crushed ice, rum, lime juice, and sugar syrup, blend until slushy, pour into a champagne flute, add a slice of lime for decoration.


Cinderella

Ingredients

6 ice cubes, 1 measure lemon juice, 1 measure white port, 3 measures white rum, 1 tsp sugar syrup, 1 egg white

Method

Put the ice into a cocktail shaker, add in the rum, port lemon, juice and sugar syrup, then add the egg white, shake very vigorously and strain into a chilled ice.

4 ice cubes, 1 measure of gin, 1 measure peach brandy, 1 measure dry vermouth, 1 measure orange juice,

Method

Place the ice into a cocktail shaker, pour in the orange juice, peach brandy, gin and vermouth, shake until a slight frostiness forms and strain into a cocktail glass.

Method

Add all contents into a cocktail shaker, shake vigorously until a frost forms and strain into a cocktail glass.

Ingredients

6 ice cubes, 1 tsp grenadine, 2 measures vodka, 1 measure cherry brandy, 1 egg white

Method

Put ice into a cocktail shaker, pour in the grenadine, brandy, vodka and egg white, shake lots, strain into a cocktail glass.



Prince Charming

Ingredients

5 ice cubes, 2 measures vodka, 1 measure apple brandy, 1 measure apricot brandy, 1 teaspoon lemon juice,

Method

Pour all the ingredients over the ice in a cocktail shaker, shake hard and fast, until a light frost forms, strain into cocktail glass.

Josiah's Bay Float ( serves 2 )

Ingredients

10 ice cubes, 1 measure Galliano, 2 measures pineapple juice, 4 tsp sugar syrup,2 measures golden rum, 1 measure lime juice, 1 whole pineapple, champagne to top up with.

Method

Cut the top off the pineapple and scoop out the insides to make a cup from it. Put the ice cubes into a cocktail shaker, pour in the rum, Galliano, lime juice, pineapple juice and the sugar syrup, and shake vigorously. Strain into the pineapple cup, and stir gently, add two straws sparkler and two cherries on a cocktail stick.

How to make sugar syrup

Ingredients

4 tbls caster sugar, 4 tbls water

Method

Pour contents into a saucepan and stir over a low heat until the sugar has completely dissolved. Bring to the boil without stirring for one minute, let it cool then can be kept in the fridge for up to two weeks.
