Cake Mix Chocolate Chip Cookies

  • 1 package cake mix (look below for suggested flavor combinations)
  • 1/2 cup margarine, softened (see note below)
  • 1 tsp. vanilla
  • 2 eggs
  • 1 6-oz pkg baking chips -see suggestions below)
  • 1/2 cup chopped nuts

Preheat oven to 350 degrees F. Combine all of the ingredients in a large mixing bowl. Drop 1-tablespoon portions 2 inches apart on ungreased baking sheet. Bake in preheated oven for 10-12 minutes. Cool 1 minute on baking sheet before removing to cooling racks.

white chocolate, cherry, mint
White or Yellow
semi sweet, milk chocolate, butterscotch
Spice
cinnamon, butterscotch
Carrot

Cake Mix/Baking Chip Combinations

Cake Mix Citrus Crisps

  • 1 pkg lemon, orange, or lime-flavor cake mix
  • 1/2 cup cooking oil
  • 2 eggs
  • 1 tsp. grated lemon peel

Preheat oven to 350 degrees F. Combine all ingredients and mix well. Drop by teaspoonful onto ungreased baking sheet. Bake in preheated oven for 10-12 minutes, or until golden. Cool on baking sheet for 1 minute, then remove to rack to finish cooling.


Cake Mix Bar Cookies

  • 1/2 cup butter or margarine
  • 1/2 cup brown sugar
  • 3 tablespoons water
  • 1 egg
  • 1 package cake mix
  • 1 cup chopped walnuts (optional)
  • 2 cups baking chips

Preheat oven to 350 degrees F. Grease a 9x13-inch baking pan. In large bowl cream together the butter and sugar until light and fluffy. Mix in water and egg, then stir in cake mix. Fold in nuts and baking chips. Spread mixture into prepared pan. Bake for 25-30 minutes. Cool completely before cutting into bars.

I have already made some cookies like this and they are very good. I made a bunch a couple of Chritmasses ago and they were a hit with everyone.
