Cooking for an Army: Chili 'N' Pasta Hash
As Easy As it Gets...
Have a big group of people to cook for or very hungry ones?
I have a few recipes for you!
Everything I'm going to share in this article is either one pot or close. And not very many ingredients.
Chili 'n' Pasta Hash
Non-Edibles you will need:
Big pot 4-6 quarts
Strainer
Cooking spoon (I like the wooden ones)
Sauce pan
Ingredients:
Dried Pasta 1-2 pounds (I like elbow or rotini but whatever's on hand works)
2 Cans of Hormel Chili (or make your own if you want)
1/4 Cup of Velveeta Cheese
2 cans of diced potatoes (4 potatoes peeled and diced)
2-3 Tbsp Sugar (to taste)
Salt & Pepper
Getting The Heat...
Bring 2-4 quarts of water to a boil. Put at least 2 table spoons of salt in the water.
Boil your pasta as per the directions on the box, usually 8-10 minutes. Use the al dente directions.
Whilst your pasta is on the cook, get your sauce pan and put all the chili in. Turn the heat up to low/med and get it to simmer. Melt in the 1/4 Cup of Velveeta. You can omit the velveeta if you can't have cheese but if its just a not liking of cheese reduce the amount, its for texture, you really cant taste it.
This is where the sugar comes in. If you do not like spicey chili, or if you find this chili a tad hot, add some of the sugar to it. Not to make it sweet (unless you want to) the sugar blunts some of the spicy. Salt & Pepper to taste.
You may either boil or micro-boil the potatoes. Cook them in the microwave or stove until tender but not mushy.
Drain pasta when done, put the pasta back in the pot, put the cooked potatoes in the pot, then when the chili is heated through and the Velveeta is melted add it to the pot as well.. Stir, cover, let sit for at least 10 minutes. then enjoy ^_^
Want the bread?
I got this bread from walmart bakery. its the french bread not the baguette.
Cut the bread on the bias (slanty not straight)
To make the butter:
1 Stick of butter (or margarine)
1 tsp of Garlic powder (or 2 minced cloves)
2 tsp Italian seasoning (more or less, to taste)
Place the stick of butter in a bowl with the seasonings and microwave it until completely melted.
Stir until blended then either dip the bread in the butter or take a spoon or brush if you have one and spread the butter on the bread.
Let me know what you thought of it, and how it turned out for you in the comments below ^_^
Good luck... and go get your cook on ^_~
