Soup Recipe Thick and Rich Garbanzo Soup

El Puré de Sopa de Garbanzo

This Garbanzo Soup is thick, rich, and extremely flavorful. There are no milk products in this creamy soup, yet, it is creamy and rich tasting! It is also a frugal hearty meal!

This hearty soup is extremely easy to cook and well suited for a busy cook. You can soak the beans and sauté the vegetables the night before. Then before you go to work combine all the ingredients in the slow cooker.

Set it on low for an 8-hour cook or high for a 4-6 hour cook.

Combine the prepared ingredients before you dress for the day and set the slow cooker on high. Then right before you go out the door to work, switch the slow cooker to low for the long day cook of 8 hours. Leave it on high if you will be back in 4-6 hours.


I recommend that when you come home from work that you switch the cooker to high for the last hour of cooking.

The house will be filled with a delicious aroma when you arrive home from work. Add a nice salad and crunchy bread or crackers. This is a family pleaser!

Garbanzos

Before this soup recipe, I was disdainful of most garbanzo recipes. That is almost disrespectful of cooking here in the Southwest! The Christmas favorite of Posolé is a garbanzo based soup and the garbanzo/chickpea legume shows up in many other recipes.

However, garbanzos, Cicer arietinum, or chickpeas are found in many different cuisines. In fact the garbanzo is a very familiar ingredient in many cuisines from Indian cuisines to the Mid-Eastern cuisines as well as South American and Mexican cuisines.

The garbanzo legume is very healthy for you. It is packed with protein, fiber, iron, zinc, and folate. Garbanzos are one of the healthy sources of carbohydrates. They are low in fats too!

Hummus is another wonderful food made with the garbanzo. Before this recipe, hummus is the only way I liked garbanzos.

El Puré de Sopa de Garbanzo Recipe Ingredients

2 T. Olive oil

2 Onions

2 Ribs celery

5 C. Turkey broth (with lots of turkey bits!)

1 Pound garbanzo beans

1 T. cornstarch

Salt and pepper


El Puré de Sopa de Garbanzo Recipe Instructions

Garbanzo bean preparation

-Soak overnight, rinse, and pick-out any stones

-OR boil for a few minutes then rinse and pick-out any stones

-OR buy cans of already cooked garbanzo beans! (* )

Place turkey broth in slow cooker and turn on high

Heat oil in large Dutch oven

Sauté chopped onions and chopped celery

Add garbanzos and stir/sauté for a few minutes

(this can be done the night before too)

Place the sautéed veggies in the slow cooker and stir in NOTE: you may need to add some water here, make sure the beans immersed, even 1" of water above is okay!

Cook for 8 hours on low or 4-6 hours on high.

Once done add 1 T. cornstarch

Hand blend to a smooth consistency

Salt and pepper to taste

Enjoy!

(*) If you use already cooked canned garbanzo beans you only need to cook long enough for the flavors to meld nicely; so, 2-4 hours in the slow cooker on low should be just fine.
