Creamy Smooth Mashed Potato's
Great side for all kinds of dishes.
I just posted one recipe that requires mashed potatoes, or suggests mashed potatoes as the side so here goes. I love this recipe because the potatoes come out nice and smooth and buttery flavored.
6 Medium sized Potatoes - Yukon Gold are nice potatoes to use. Peeled and diced. Serves 4.
1/2 Stick of butter
Milk as needed.
Salt & Pepper to taste.
Place diced potatoes in a medium sized pot and cover with cold water. Add 1/2 teaspoon of salt to the water. Bring to a boil, turn heat down so pot will not boil over with lid lightly on pot and continue to cook potatoes for approximately 1/2 hour or until potato slides off a fork and pulls apart with a fork.
Drain the potatoes when cooked using a colander and place back on the turned off burner in the pot. Add the 1/2 of butter stick and add approximately 1/2 cup of milk. Using a hand electric mixer giver the best results, begin whipping the potatoes; add more milk if not creamy enough but be careful not to make the potatoes runny.
Keep whipping and adding milk until the potatoes are light and fluffy and appear lump free. Then taste and add salt and pepper to taste and serve as a side with your favorite entre'.
