Creative ways to use leftover meatloaf

Creatively using leftovers is the secret to keeping food cost down. I always use my leftover for cooking. Some foods like meatloaf and turkey I actually love having leftovers. This hub will give a few of the ways I like to use leftover meatloaf.

Everybody enjoys a meatloaf sandwich the day after having it for dinner but have you ever considered making a meatloaf club sandwich. There isn't too much that can be done to improve a club sandwich but using meatloaf in place of turkey might be one of them. Make your club sandwich as you normally would by toasting three slices of bread. While the bread is toasting make two piles. The first pile will consist of a slice of meatloaf, two slices of ham, and two slices of Swiss cheese. The second pile will have lettuce, tomato slices, three slices of cooked bacon, and two slices of American or Cheddar cheese.

When the bread is finished toasting spread mayonnaise on each slice and build your double decker club sandwich. So that the sandwich doesn't fall over make sure to put the meatloaf, ham, and Swiss stack on the bottom, and the lettuce, tomato, bacon, and cheddar stack on the second level. Place four toothpicks into the club sandwich (one on each side) and quarter the sandwich by cutting on the diagonal. Use the toothpicks to attach the quarter sandwiches at their bottoms to make two halves. Lay the half sandwiches on their sides beside each other. Serve with potato chips and a pickle.

Another dish that everyone loves is pizza. Why not use meatloaf as a topping for pizza. Top your pizza with marinara, mozzarella cheese, meatloaf crumbles, blanched string beans, and thinly sliced turnips for a gourmet pizza at home. Or make a meatlover's pizza with sausage, pepperoni, ham, and crumbled meatloaf. Bake your hand tossed pizza on a stone until the crust is golden brown and the cheese is melted.

Reheat the meatloaf slices in a skillet and serve with eggs for a hearty breakfast.

Use the meatloaf to make a Cincinnati Style Chili. Saute a diced onion, with one diced jalapeno. Add once 16 oz can of crushed tomatoes, meatloaf crumbles, a teaspoon of cumin, one cinnamon stick, and hot sauce to taste. Serve over spaghetti with melted cheddar on top.

Basically the possibilities for leftover meatloaf is endless. Get creative with it. You'll find yourself enjoying leftovers much more than you though was possible.
