Crispy Oven Orange Roughy Recipe
Fast Nutritious Meal
This is a fast and easy fish recipe that is crisyp and tasty. You get the crispyness of fried, without the frying and use only a little coconut oil. You may substitute other fish (Talapia, white fish, etc.) I use organic coconut and oil available from Amazon sources below or most health food stores.
Coconut Orange Roughy - 4 servings
4 Orange Roughy Fillets (I get them at Aldi’s - frozen)
Thaw before cooking
1 cup bread crumbs
½ unsweetened dried coconut
1 TBS dried parsley
Dash of Sea Salt
Dash of Pepper
Dash of Cayenne Pepper
(add other dried herbs as desired)
Mix together on a paper plate
3 Tbs. Coconut oil
Preheat oven to 450 F
Add the coconut oil to glass baking dish
Place dish into oven so the oil gets hot
Roll the fish in the coating mix until covered on all sides
Open oven and carefully place fish into hot-oiled dish
Turn Oven down to 350F
Bake for about 20 minutes.
Serve with Cole slaw, steamed fresh asparagus and rolls.
