Crispy, Sweet Carrot Salad
CRISPY SWEET CARROT SALAD
This is a twist on plain old carrot raisin salad. I was craving something different and decided to liven up one of my favorite salads with some extra ingredients. This is super easy, kind of sweet and refreshing.
1 cup raisins, (first soak in water for 30 minutes, then drain off water)
2 cups shredded carrots
2 cups peeled chopped apples, any kind
1 can pineapple chunks, drained
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon fresh thyme or ½ tsp. dried thyme
1 tablespoon Cider vinegar
1 tablespoon sugar
½ cup to 1 cup mayonnaise, according to taste
Mix all of the above ingredients in a bowl, cover, and chill for an hour or two.
