When I think about Cuban cuisine I think about incredible flavors and cultural influences but made with very simple ingredients but still have a great flavor profile to give you the taste that you create in your mind. So today I would like to share with a very simple Cuban dish that is full of flavor and very easy to prepare but has all the taste of fusion Cuban flavors and the dish I'm talking about is Cuban Chicken so please follow me with this recipe for a great Cuban treat.
6 chicken breast halves, skinned
1/2 cup of flour
3 tablespoons of olive oil
1 onion, chopped
2 clove of garlic, minced
1 can (28 oz) chopped tomatoes with juice
1/4 cup dry white wine or 2 tablespoons lemon juice
1/2 teaspoon of cumin
1 teaspoon of oregano leaves
1/2 teaspoon of cinnamon
1/4 teaspoon of pepper
1/4 cup of almonds, sliced
1/4 cup of raisins
1/2 cup of stuffed green olives
Shake chicken breasts and flour in a plastic bag until completely coated. Heat 2 tablespoons of oil in electric skillet; brown chicken and garlic in remaining tablespoon of oil unit soft. Stir in tomatoes, wine and seasonings. Cook about 5 minutes; return chicken to skillet and cook on low heat about 30 minutes or until done. Garnish parsley. Serve over rice or couscous.
