Cucumber - Tomato Salad: Easy (!) Authentic Ukrainian Recipe
Whenever I spent my summers with my grandmother in a small Ukrainian village (and when I say small, I mean no plumbing, no phones, but plenty of bugs and fresh air), she made this salad to go with everything. It particularly stands out to me on the side with mashed potatoes. Of course, our cucumbers, tomatoes and dill came straight from our garden, but these days you do what you can.
Can't be any easier...
2 cups of sliced cucumbers
2 cups of sliced tomatoes
2 tablespoons of sour cream
2 tablespoons of chopped dill
1 teaspoon of salt
Mix it well, and enjoy!
This salad, actually, can be made with one substitute, that makes it feel like it's a whole another dish. In fact, for the holidays, we sometimes make both versions, as they complement different meals in different ways.
Try making the same salad with olive oil, instead of sour cream, and you will see what I am talking about.
