Curried Chicken Tacos with Cabbage Raita
This is a recipe that I created not to long ago at work. It is Indian/ Mexican food fusion and is absolutely delicious though I must say it really isn't very authentic. This recipe will serve about two people.
What you will need for the curried chicken are one large chicken breast cut into quarter inch cubes, one small yellow onion diced, three cloves of garlic minced, one half a teaspoon of mustard powder, one half a teaspoon of cumin, one and a half teaspoons of curry powder, about a tablespoon of milk, and salt and black pepper to taste.
Begin by sweating the diced onion and minced garlic along with the mustard and cumin powders, and a pinch of salt. Cook until the onions are translucent and add the chicken, curry powder and milk.Stir then cover and cook until the chicken is done. It should remain juicy and a nice sauce will form around the chicken. Finish by adding salt and pepper for taste.
For the Cabbage Raita you will mix about an eighth cup of shredded cabbage, about a fourth cup of sour cream, and half a teaspoon of white pepper.
For this recipe I recommend using soft flour tortillas. Assemble each taco with about an ounce of curried chicken and an ounce of the cabbage raita. Typically with tacos I serve them unassembled.
