Delicious Apple Recipes

Fall is the perfect time to cook with apples, when they are at their peak of freshness and flavor. I live in Wisconsin where a large variety of apples are available but most apples will do for baking. I would not suggest an apple like Red Delicious however, that is more of an eating apple than baking.

Good baking apples are typically fairly small and not as crisp as an eating apple. Macintosh is my personal favorite, but other people swear by Cortland or Jonathan, you can use your favorite in all these recipes.

Apple Pie

INGREDIENTS

3/4 CUP SUGAR

1/4 CUP FLOUR

1/2 TEASPOON CINNAMON

1/2 TEASPOON NUTMEG

6 CUPS THINLY SLICED, PARED APPLES

2 TABLESPOONS MARGARINE OR BUTTER

DIRECTIONS

Preheat oven to 425 degrees.

Prepare your favorite pie crust recipe and line 9 inch pie pan. (If you don't like to make your own pie crust use refrigerated, which is really just as good as homemade) Mix sugar, spices and flour. Stir in apples.

Turn prepared apples into pie crust, dot with margarine,cover with crust, making sure to cut a couple of slits in the crust, then seal and flute the edges.

Place pie pan on cookie sheet, to catch any apple juices that bubble over. To protect the pie crust edges from over-cooking place foil around edges of pie crust, remove this after about 30 minutes of baking. Then bake the pie for about 10 to 20 more minutes, for a total of about 40 to 50 minutes. Pie will be bubbly and brown.

Overnight Apple Coffee Cake

INGREDIENTS

3 3/4 TO 4 CUPS FLOUR

3 TABLESPOONS FLOUR

1 CUP SUGAR

1 TEASPOON SALT

2 PACKAGES ACTIVE DRY YEAST

1 CUP MILK

3 TO 4 TEASPOONS MILK

1/4 CUP WARM WATER

1/2 CUP MARGARINE OR BUTTER

2 TABLESPOONS MARGARINE OR BUTTER

2 EGGS

4 CUPS SLICED AND PEELED APPLES

1/2 TEASPOON CINNAMON

1/2 CUP POWDERED SUGAR

DIRECTIONS

In large bowl, combine 1 1/.2 cups flour, 1/4 cup sugar, salt and yeast and mix well.

In small sauce pan, heat 1 cup milk, water and margarine until 120 to 130 degrees.

Add warm liquid and eggs to flour mix and blend at low speed until moistened. Beat 3 minutes at medium speed.

Stir in 2 1/4 to 2 1/2 cups flour, by hand, to make a stiff dough. Cover tightly and refrigerate overnight.

Next day

Use cooking spray to coat 13x9 pan. Press dough into the pan. Arrange apple slices in rows on top.

In small bowl, combine 3/4 cup sugar,3 tablespoons flour and cinnamon and mix well. With pastry blender cut in 2 tablespoons butter until mix is crumbly. Sprinkle evenly over apples and cover loosely with plastic wrap and towel.

Let rise in warm place until doubled in size, about 45 minutes.

Preheat oven to 375 degrees. Uncover dough and bake for 30 to 40 minutes, until golden brown.

In small bowl mix powdered sugar and 3 to 4 teaspoons milk to make a glaze. Then drizzle over warm coffee cake.

Apple Crisp

I have been disappointed in apple crisp recipes in the past so I devised my own. Too many recipes focus too much on the crisp and don't have enough apples. Hopefully I have reversed that with this recipe. I make it with Macintosh apples, but any cooking apple will work.

INGREDIENTS

6 CUPS PEELED AND THINLY SLICED APPLES PIECES

2/3 CUP BROWN SUGAR

1/2 CUP FLOUR

1/2 CUP OATS

1/3 CUP BUTTER OR MARGARINE

3/4 TEASPOON CINNAMON

3/4 TEASPOON NUTMEG

DIRECTIONS

Preheat oven to 375 degrees. Use cooking spray to coat 8x8 inch baking pan. Arrange apples in bottom of pan. Combine rest of ingredients by hand or in food processor and sprinkle over apples. Bake until topping is golden brown, about 30 minutes.

Apple Cake

INGREDIENTS

1 1/2 CUPS SUGAR

1 CUP VEGETABLE OIL

3 EGGS

2 CUPS FLOUR

1 1/2 TEASPOONS CINNAMON

1 TEASPOON BAKING SODA

1 TEASPOON VANILLA

1/2 TEASPOON SALT

1/4 TEASPOON NUTMEG

3 CUPS CHOPPED APPLES

1 CUP COARSELY CHOPPED NUTS, OPTIONAL

DIRECTIONS

Preheat oven to 350 degrees. Use cooking spray to coat 13x9 pan.

Mix sugar,oil and eggs until blended. Stir in flour, vanilla and spices and beat for one minute. Stir in apples and nuts and pour into pan.

Bake until wooden pick inserted in center comes out clean, about 35 to 45 minutes.

I don't usually frost this cake, but if you do, cream cheese frosting is best.

Apple Crumb Cake

INGREDIENTS

1 1/2 CUPS FLOUR

1 CUP SUGAR

1/4 TEASPOON SALT

1/2 CUP SOFT BUTTER

5 CUPS APPLES, PARED AND THINLY SLICED

3/4 TEASPOON CINNAMON

1/4 TEASPOON NUTMEG

DIRECTIONS

Preheat oven to 350 degrees.

Mix flour, 1/2 cup sugar, salt and butter until crumbly. Reserve 3/4 cup of this mix. Press rest in bottom and up about 3/4 inch in a 9 inch pan.

Mix apples, remaining 1/2 cup sugar and spices. Put on top of crumbs in pan.

Bake for 20 minutes, Sprinkle rest of crumbs on top and bake an additional 20 to 25 minutes or until crumbs are brown.

Apple Pudding

INGREDIENTS

1 CUP SUGAR

1/4 CUP BUTTER OR MARGARINE

1 EGG

1 CUP FLOUR

1/2 TEASPOON CINNAMON

1/2 TEASPOON NUTMEG

1 TEASPOON BAKING SODFA

3 MEDIUM APPLES, PEELED AND CHOPPED.

DIRECTIONS

Preheat oven to 350 degrees.

Cream together butter, sugar and egg. Sift dry ingredients together and add to creamed mixture. Then sir in apples.

Pour into greased 8 inch pan and bake for 30 minutes.

Serve hot with ice cream, if desired.
