Delicious Potato Soup

This is a very quick inexpensive soup to make and is a great way to get rid of leftover mashed potatoes. What you will need for this soup is about two potatoes cut into half inch cubes, one stalk of celery diced fine, one onion diced fine, and one carrot diced fine, three cloves of garlic minced, a teaspoon vegetable oil, a pinch of salt, about a quart of stock, about a cup of prepared mashed potatoes, and a quarter cup of milk.

Note: For this soup I used leftover mashed potatoes from my dinner the night before and pork stock leftover from some braized pork I made earlier in the week for tacos al pastor.

Start by sweating your onion, carrot, celery and garlic in the vegetable oil with a pinch of salt over low heat. When the onions are transluscent add the cut potatoes and cover with stock. Allow the soup to simmer until the potatoes are tender then stir in the mashed potatoes to thicken it. (If you don't have leftover mashed potatoes instant potatoes will work as well, or you can begin with one extra potato diced small) Continue cooking the soup until it is hot. Finish it by mixing in the milk (whole milk works best) and salt and pepper to taste.

This should make about four servings.
