Being on a raw vegan diet does not mean you have to stick to undressed carrot sticks and cucumber. You can enjoy delicious meals, dips, salad dressings and smoothies on the raw food diet. Salsas are excellent with homemade chips, with salads and with raw vegetables. They can also go nicely with jicama or turnip raw fries. You only need a few ingredients to make this delicious salsa, and it takes no time at all. You really don’t need any special culinary skills to put this together. Just throw it together and enjoy.
3 cups cherry tomatoes, chopped in halves
½ cup sweet corn, fresh from the cob
½ teaspoon sea salt
1 tablespoon jalapeno pepper, minced
1 tablespoon ginger, minced
¼ cup chopped fresh cilantro
1 tablespoon olive oil
Making this salsa is really simple and easy, all you have to do is put all the chopped ingredients into a bowl and stir well. Once you have done this you can put it in the fridge to chill for half an hour. Then serve with raw burritos, tacos, homemade chips, with a salad or on its own.
