Some Delicious Ideas for That Sweet Tooth!

 Let's face it, you're very busy these days, and having company over is sometimes a challenge. Especially, if you like to make all your cooking, ending with a delicious dessert. Often, the things that has to go is dessert. I would like to give you a few ideas that go from more elaborate desserts to some that you put together in no time at all and are exotic and unusual! Being vegan does not have to deprive your sweet tooth, and wanting to enjoy the company of family and friends doesn't necessarily have to drive you the kitchen for hours and hours!

Sweet Potato and Coconut Sauce

 No, I'm not kidding you! This is absolutely delicious! If you have a plain cake, just serve it with some of this sauce on top of it! You will hear wonderful comments! It is pretty easy to make also. You can see the photo of what it looks like in one of the photos of the collage above.

Ingredients

1 sweet potato or yam

1 can of coconut milk

1/4 cup brown sugar

1/2 tsp. powdered cinnamon

Peel your sweet potato or yam and cube it, put it in a blender or food processor with the coconut milk and process it till smooth. Scrape into a sauce pan, add the rest of the ingredients and cook for about 30 mintures, strigging frequently and not allowing it to burn.

Serve cool.

 

 

 

Nanateekee

Ingredients:

2 medium ripe plantains (not too ripe, not the ones with black skins. Prefer the ones that are yellow and have only black stains, but are still firm)
1 can of coconut milk
1 cup shredded coconut
1 jar of all-fruit jelly in one of the following: apricot or pineapple

Optional: 1/2 tsp. finely grated lemon peel

Grease a baking dish and pour a little bit of coconut milk on the bottom of it.

Peel the plantains, slice them lengthwise. Place slices of plantain to cover the bottom.
Spoon all-fruit apricot jam on top of the plantain. Cover with more plantain. If you want to use the grated lemon peel, add it now.
Douse with coconut milk. Sprinkle with the shredded coconut.
Bake at 350º F for 30 to 40 minutes, uncovered.

Plantain Orangina

Ingredients:

2 medium ripe plantains (not too ripe, not the ones with black skins. Prefer the ones that are yellow and have only black stains, but are still firm)
1 can of coconut milk
1 cup shredded coconut
1 jar of orange jelly
1/2 tsp. grated orange rind
1 tsp. of powder of cinnamon
1/4 cup shredded coconut


Peel the plantains and slice them lengthwise. Place them in a baking dish and cover them with the coconut milk. Sprinkle the top grated orange peel and cinnamon. Cover that with the shredded coconut. Bake in a pre-heated oven at 350 degrees for approximately 30 minutes.

I did share! If you look below, you will see the Sweet Potato and Coconut Sauce and the Nanateekee. The thrid one is just sliced plantains that you bake with orange juice and serve hot with a bit of soy margarine.

Love the coconut plantain recipe. However, adding jams and jellies tend to add too much sugar. I also know that agave is too sweet too. I wonder how dates would work if pureed??? I am trying to subtract as much sugar as possible. I even have to take it out of my soy milk. Your thoughts as a vegan?

Experiment! Dates or date sugar (which is nothing but dried pulverized date pieces) would work well and be really delicious!
