Deviled Egg Recipe for people who don't like mayo

No Mayo Deviled Eggs with Salsa

I love deviled eggs and often take them to family gatherings. However, there are several people in my family who won't eat anything that has mayo on, in or near it. This recipe is something I came up...

Ingredients: 24 hard bolied eggs. (read my hub on how to boil a perfect hard boiled egg here), 1 jar of mild, chunky salsa (you can use any heat or brand), One 8 oz package of cream cheese (low fat works too), softened, coarse ground black pepper, paprika, banana peppers and/or jalapenos.

Boil the eggs and peel. Cut each egg in half, scoop out the cooked yolk. Place all yolks in a large bowl. Add in the package of cream cheese. I like to beat this with an electric mixer to make it fluffy.

I take a small slotted spoon to dip out one cup of salsa. This is to allow some of the liquid to drain back into the container. One cup of salsa is added to the yolk mixture and is gently folded into it to blend. You can certainly add more or less salsa, depending on your own tastes.

Spoon it all into a plastic bag. Snip away a small corner of the bag so it's like a pastry bag. Squeeze the filling into the egg halves.

Slice a banana pepper (or jalapeno) and place one pepper ring on top of each egg for a garnish.

Sprinkle coarse ground black pepper and paprika on the eggs. I don't usually add any salt, myself.

Arrange in a carrier and put in the fridge until they're ready to go.
