EXTRAordinary Chicken Noodle Soup
Well I pulled this recipe right out of my behind and I am extremely happy to tell you that it is amazing. Very flavorful, healthy and just plain delicious. Ok I will stop tooting my own horn now but if you disagree or agree feel free to comment.
3 Diced up Chicken breast
1 Celery floret
1 cup diced Carrots
2 diced Green Onion floret
1/2 diced Red Pepper
900 ml Chicken Broth
Curry
Salt/Pepper
2 Cloves diced Garlic
Poultry Blend ( Combination of fresh Italian Parsley, thyme, Roesmary and Sage) Cut up a small amount of each
Water (roughly about 2700ml {x3 the amount of the broth})
1/3 cup Corn Starch
3/4 of a 375g bag of Egg Noodles
Put the chicken in the frying pan with some butter and sprinkle curry lightly over the chicken to it covers the top of the chicken. Fry it up on medium til its pretty cooked, stirring it around with the curry. In the crock pot put the celery, red pepper, green onion and carrots in and pour the broth over top. In a container mix the corn starch together in about a cup of water then pour that in as well. Dump the chicken in and then fill the frying pan with water, swirl it around to get all those precious chicken juices then pour that into the crock pot. Whats in the crock pot should have enough water where everything swims around quite freely. Put in the garlic, poultry blend and quite a bit of salt and pepper. For the salt and pepper do a taste test because you may want more and more.
Leave it in the crock pot for about 4 hours, or less if you like.
In a saucepan filled with water put the noodles in and cook for about 8 minutes, drain and rinse. Then add to your soup. I let it sit for about 20 more minutes in the crock pot then ate away.
