My Sweet Potato Casserole
Great Side Dish with Sweet Potatoes
Candied Sweet Potato Casserole
Preheat your oven first, to 375 degrees.
You will need 6 sweet potatoes
dashes of salt, cracked pepper and paprika
3/4 cup of brown sugar, OR 1/3 cup of maple syrup (or some of both)
1/2 tsp of grated lemon rind (just the yellow part, the white part is more bitter)
1 1/2 Tablespoons of lemon juice or 1/8 teaspoon of ginger. ( Or you can use some of both)
2 Tablespoons of butter
Pare the potatoes and then cut them lengthwise into one half inch slices. Place these into a shallow and greased baking dish, like a pyrex dish. Season with the salt, dash of cracked pepper, paprika.
Then sprinkle it all with the brown sugar, maple syrup, grated lemon rind, and lemon juice and ginger. (Or you can use just the lemon juice or ginger if you don't have both.)
Dot it all with little bits of butter, and bake for about 20 minutes. Just before the end, you can put on some mini marshmallows for fun. Or take out, set to broil and put in with the marshmallows and watch closely because you don't want to burn it! Even if crispy brown, these will taste great and some kids may try this dish that may not have otherwise wanted to before. Enjoy!
This is a favorite in our family for years now. The kids all love the marshmallows so much! You can adjust as needed, its not a hard and fast recipe that you can't adapt to your liking. A great and fun side dish for Thanksgiving, Christmas, or any Holiday really including a New Years Eve Dinner. Even with all the sweets in this one, sweet potatoes are just so healthy for you, as we are finding out more and more. As one of the more colorful and healthy vegetables out there, why not try this if you never have.
Whenever we don't have a sweet potato dish out on the table with mini white marshmallows on top, one of the children in the family are bound to ask where it is. So we have learned to just keep some of these ingredients on hand, its such a winner. You can adapt it with sweet potatoes from a can as well, or cut up the sweet potatoes in another way depending upon your preference.
