Easy Lunch: Pepperoni Grilled Cheese Sandwich

This sandwich was born out of a love of anything pizza and lack of peanut butter or jelly. This sandwich is fast, easy, and more importantly--delicious! You can experiment with other toppings or just leave it as is. Enjoy!

Yields: 1 sandwich

Ingredients

  • Shredded mozzarella cheese
  • Pepperoni
  • Sliced bread
  • Butter
  • Pizza sauce
  1. Pre-heat an electric griddle or non-stick skillet. If you're making more than two sandwiches, it is much easier to use a griddle.
  2. Butter one side of a slice of bread and place it on the cooking surface. Sprinkle a layer of cheese to cover the bread. Add 4 slices of pepperoni. Butter one side of a second slice of bread and place on top.
  3. Grill for a few minutes until golden brown. Carefully flip the sandwich to grill the opposite side. Remove from the cooking surface to a plate. Cut in half, serve with warm pizza sauce.
