Pumpkin+Gingerbread Trifle

The Spicy, Creamy Taste of Fall in a Bowl

Do you love pumpkin pie? Do you hate pumpkin pie? Either way, I guarantee you will love this! Imagine combining a Starbucks gingerbread latte, a pumpkin spice latte (complete with whipped cream, of course) and some moist spicy cake. Cool the mixture in the fridge so the flavors marry and meld, but the textures are retained.

The result is this easy, crowd-pleasing dessert I call "The taste of Fall in a bowl."

MM's take on Paula Deen

I originally saw Paula Deen make this recipe on her Food Network Show. Amazingly, it does NOT contain 3 sticks of butter like seemingly everything else she makes (that woman loves her butter!).

But It's still classic Deen: plenty rich, with creamy dreamy pudding pumpkin goodness. Even if you're not serving it after a big Thanksgiving feast, it can be a bit filling (probably because it's so yummy you'll want seconds).

After I made it the first time I decided to experiment with ways to lighten it up -- just a tad.

Accordingly, I've provided the full-on PD original, along with some ideas for cutting fat and sugar... I personally think the lighter version is just as delicious!

ORIGINAL Paula Dean Version Ingredients

  • 2 (14-ounce each) packages gingerbread mix
  • 1 (5.1-ounce) box cook-and-serve vanilla pudding mix
  • 1 (30-ounce) can pumpkin pie filling
  • 1/2 cup packed brown sugar
  • 1/3 teaspoon ground cinnamon (or cardamom if you prefer)
  • 1 (12-ounce) container frozen whipped topping
  • 1/2 cup gingersnaps, optional

MM'S Substitutions (Lighter Version)

  • 2 (14-ounce each) packages gingerbread mix
  • 1 (5.1 ounce) box of fat-free sugar-free vanilla pudding mix (can use instant or cook 'n serve)
  • 1 (30-ounce) can pumpkin pie filling
  • 1/2 cup packed brown Splenda
  • 1/3 teaspoon ground cinnamon or cardamom
  • 1 (12-ounce) container frozen whipped topping (Cool Whip comes in in sugar-free, fat-free, lite, regular, and extra creamy varieties. You can find store brands in most of these varieties as well)
  • 1/2 cup sugar free gingersnaps, optional (available in the grocery store)

Directions

Bake the gingerbread according to the package directions; cool completely.

While gingerbread is cooling prepare the pudding and set aside to cool (only if you are using cook 'n serve pudding. Instant pudding doesn't need to cool).

You can use whole milk, 2% milk, 1% milk or skim milk in your pudding -- or a combination, depending on how serious you are about cutting fat from your trifle

Stir the pumpkin pie filling, sugar, and cinnamon or cardamom into the pudding. Pudding will be light pumpkin colored (lighter than pumpkin pie)

Crumble 1/4 to 1/3 of the gingerbread into the bottom of a large, clear* bowl (or trifle bowl if you have one).

Pour 1/4 to 1/3 of the pudding mixture over the gingerbread

Add a layer of whipped topping over pudding layer

Repeat with layers using the remaining gingerbread, pudding and whipped topping.

Sprinkle of the top with crushed gingersnaps, if desired. Or you can reserve some of the gingerbread and crumble some of that over the top.

Refrigerate overnight (doesn't have to be overnight. 4 hours is plenty).

*A punch bowl works nicely. Or you can make your trifle in a rectangular pan like a lasagna or even in individual servings. The idea is to show off the tri-colored layers using something clear.

It IS good! And if you favor the gingerbread but aren't keen on pumpkin, you can use straight vanilla pudding, or butterscotch pudding, or whatever you like!

Funny that you should mention Paula Deen. Earlier today I was thinking about her Gooey Pumpkin Butter Cake, which does, indeed, contain at least 3 sticks of butter.

I also will not be able to find the gingerbread mix in South Africa. That is not a problem, what I'm not sure of is which pudding mix to use. We get an instant one that has to be eaten within 3 hours and then one that is more like a cream caramel. So I wonder which one will work the best.

Hello Hendrika,

If you are willing/able to, homemade gingerbread works great. Or you can use any cake mix (spice, white and add ginger flavoring).

As for the pudding, I would definitely suggest the cooked kind. That is what this recipe originally called for. I switched to instant because I am LAZY!

I don't think you'll want to put in any ingredient that has to be eaten within 3 hours. While your guests may love the trifle and eat it in one sitting, it still needs to 'set' in the fridge before you serve it.

Yes, might as well just apply the whipped cream to the waist, the pudding to the thighs and hips. That's the reason I came up with this "lite" version. But truth be told, it's just to be able to justify eating more of it.

I hope you like it and your family, too. If your family doesn't like that combo of flavors, try it with chocolate and vanilla or any combo of cake and pudding-y filling and whipped cream!
