How to make Lo-mein with Ramen Noodles(Tastes like Chinese Caryout)
This is another dish that took me a while to figure out. I finally worked out a recipe that tastes basically like the Lo-mein that I've ordered at Chinese cary-out places. Then I took a bus trip from Northern Indiana to NYC, Washington DC, and Richmond and ate in Chinatown at someplace I'd heard was renowned for their noodles, and what they called lo-mein tasted nothing like this and was served with four different types of Chutney. So I'll just say that this is Americanized Lo-mein. I can't vouch for it's authenticity, but it still tastes good.
For this recipe you are going to need a wok on high heat, about a tablespoon of vegatable oil, about a teaspoon of sesame oil two or thee cloves of garlic minced, about a half teaspoon of ginger paste, one onion julienned, one carrot sliced, one stalk of celery sliced, Soy sauce, Oyster sauce, one package of Chicken Flavored Ramen noodles cooked and the broth it was cooked in. (You can add whatever other types of vegetables and meats you feel like adding.)
I think getting the right flavor is more about stir fry technique than anything else. The biggest thing is keeping your wok very hot and working quickly, This is very difficult to accomplish on an electric range. Your wok needs to be smoking hot before you add you vegatable oil. Then you will quickly add the garlic and ginger, and immediately after add the onion, celery, and carrot. Then add whatever other vegies you feel like. Give the vegetables a toss or two and add the cooked ramen noodles. Give another quick toss or two before you add the ramen noodle broth. Add a dash or two of soy sauce, the chicken broth, and a couple tablespoons of the oyster sauce by eye. Finish with the sesame oil. This liquid will quickly reduce to form the lo-mein sauce around the noodles.
Note: You can easily add meat to this recipe just make sure it has a chance to cook a little before you add in your noodles.
Note: Oyster Sauce is pretty easy to find in my grocery store, but I have had luck subsituting half brown sugar and half balsamic vinegar in place of oyster sauce.
Note: This recipe works very well for me, but it took me a while to get it right. Ramen noodles actually work better than the "lo-mein" noodles you can buy at the store.
