Easy Strawberry Jell-O Parfait

Who doesn't love Jell-O? Of course, kids love this classic treat, but with this simple recipe, you'll be able to create a beautiful gelatin dessert, with absolutely no fuss or trouble. This is something that even the kids can make and they'll love presenting their gorgeous results for holiday meals, family dinners or just as a special treat.

All you need are a few simple ingredients!


1 - 3-oz package strawberry flavored gelatin

2 cup sliced fresh strawberries

1 cup thawed Cool Whip whipped topping

extra strawberries for garnish, optional

Directions

Prepare the gelatin according to the package directions. Chill until the gelatin just starts to thicken. Measure out 2/3 cup of the thickened Jell-O and set aside. Add sliced strawberries to the remaining gelatin; then carefully spoon into 4 to 5 parfait or dessert glasses. Place the glasses at an angle in a pan (I used two loaf pans). Chill in the refrigerator until the gelatin is completely set.

Once the gelatin is set, gently fold the whipped topping into the 2/3 cup of gelatin that was set aside in the beginning. Spoon topping mixture into the glasses of jello. Chill. Garnish with a little whipped cream and strawberry slices, if desired.

Jello Parfait Variations

Strawberry is a family favorite at my house, but don't be afraid to experiment. Try making red and green parfaits for a beautiful Christmas presentation. Blue and Red would be great for the 4th of July or a summer picnic. Of course, you can make parfaits to match just about any color scheme for a party and you can vary the fruit or leave it out, whatever you prefer.

If you have kids, show them the picture of the parfaits and they'll be excited to help. You might even get them to make these all on their own. The only "cooking" involved is boiling some water! Kids love making their own contribution to a meal or special event and these parfaits are the perfect opportunity for them to get involved. They'll be so proud of how beautiful their dessert looks!
