Easy Vegan Recipes for Milk and Butter in Less Than 30 Minutes

Homemade Nut Milk

1/4 cup Nuts or seeds

1/3 cup Cooked Rice

1 teaspoon Salt

1 tablespoon Honey

3-1/2 cups Water

Blend in a high-speed blender for one to two minutes (may take a little longer in a regular blender), and pour into your pitcher. To make a full quart, use 1/3 cup of nuts and/or seeds and 1/2 cup of cooked rice. Cooked millet can be used in place of the rice. Straining is not necessary.

Coconut Butter

1-1/2 cups water

1/2 cup coconut

1/4 cup cornmeal

1 teaspoon salt

Dump all into sauce pan. Cook on medium heat, stirring the while until the mixture thickens somewhat. Pour into a blender and blend for 2 minutes. Butter will be a little runny, but it thickens as it cools. Keep in the refrigerator.
