Easy and Delicious Cake Recipes
Here are some of my favorite, easy and delicious cake recipes. These recipes are great for various occasions such as birthdays, holidays and more.
Also, I will be frequently updating this list with new recipes, so you might want to check back in every now and then to see whats new. Delicious Peanut Butter Cake
1/3 cup - shortening
1 1/2 cup - brown sugar
1/2 cup - peanut butter
1 cup - milk
1 tsp - vanilla
2 cup - flour
1/2 tsp - salt
2 1/2 tsp - baking powder
Preheat your oven to 350 degrees. Next, go ahead and prepare your cake pans. When cooking, it is very important to stay organized. Lets start off by creaming your shortening in a small bowl. Beat in 1 cup of brown
sugar and 1/2 cup of peanut butter. In another bowl, beat
together, 2 eggs and 1/2 cup of brown sugar. Add this mixture to the
first mixture and beat them together, well. Mix the flour, salt and baking
powder together. Add your flour mix to the first mixture with 1 cup of milk and 1 tsp of
vanilla. Pour the mixture evenly into a cake pan and bake for 30 minutes or
until the middle begins to firm. Enjoy this delicious peanutbuttery dish.
Tasty Hummingbird Cake
2 cup - flour
1 tsp. - cinnamon
1 tsp. - baking soda
1 cup - oil
2 cup - sugar
1 tsp. - salt (optional)
2 cups - bananas, diced
1 - (8 oz.) can of crushed pineapple with juice
Put all ingredients in a large mixing bowl and mix until well blended using your hands or a wire whisk or spoon (about 350 strokes). Pour mixture into a greased and floured 13 x 9 inch pan. Bake in a 350 degree oven for 45 to 60 minutes (test firmness with a toothpick). Next, we're going to make the cream cheese frosting.
- Cream Cheese Frosting
1 - box of confectioners sugar
1 - stick of margarine
1 - (8 oz.) pkg. cream cheese
2 tsp. - vanilla
When making icing, I've found it's best to use an electric mixer. Beat all ingredients together with an electric mixer. If too thick, add a little milk while beating. You will only need about half of this recipe to frost a 13 x 9 inch cake.
Note :Cream cheese and margarine should be at room temperature.

Chocolate Pudding Banana Cake
1 - box chocolate fudge cake mix or any chocolate cake recipe (the recipe above will work fine)
¼ - box of chocolate pudding
2 bananas (smashed or crushed)
Empty your box of chocolate cake into a mixing bowl and follow directions on package for mixing. Add 1/4 package of pudding mix plus 2 large, smashed bananas to the mixture. Beat according to directions, 2 to 3 minutes with electric beater or approximately 2 minutes (300 strokes by hand). Bake at 350 degrees for about 30 to 35 minutes or until top is dry. Add frosting if you like.
Note: This recipe is also great with chocolate chips.
Delicious Mocha Cake
12 oz. Pkg. - chocolate chips
2 tbsp. - instant coffee
1/4 cup - water
3 tbsp. - sugar
6 - eggs
1 tsp. - vanilla
Pinch of salt (about half a tablespoon)
8 1/2 oz. Pkg. - chocolate wafers (I prefer Chip O'Hoy or even Oreos)
Combine chocolate chips, instant coffee, sugar, water, and salt in the top of a double boiler on very low heat until melted. Be very careful not to scorch the mixture. Constantly stir and let cool. Add egg yolks and vanilla and blend them in well. Next, beat the egg whites until they become stiff. Fold chocolate mixture into the whites. Crush the wafers with a rolling pin until they become fine. Arrange 1/3 of the wafer crumbs in an 8 x 8 inch square pan. Cover with half of the chocolate mixture. Add another 1/3 of crumbs and place in freezer for 1 hour. Add the remaining 1/2 of chocolate mixture, then add the rest of the crumbs. Chill in freezer 2 hours, then move to refrigerator and let sit overnight. Serve with whipped cream on top.
Carrot Cake (with a pineapple twist)
1 1/2 cup - salad oil
2 1/2 cups - sugar
2 1/2 cup - flour
2 tsp. - baking soda
1 tbsp. - cinnamon
1 tsp. - salt
3 cups – carrots (peeled and grated)
1 can (8 oz.) - crushed pineapple (drained)
1 1/2 cups - chopped pecans
Combine oil and sugar in a small bowl. Add eggs, one at a time, beating well after each one. Combine flour, baking soda, cinnamon and salt and sift together with your hands. Add dry ingredients to oil mixture, stirring thoroughly. Add carrots and pineapples and mix in the pecans. Pour the mixture into a well-greased tube pan. Bake for 1 hour and 20 minutes at 325 degrees. Frost when cool.
8 oz. - cream cheese, softened
6 tbsp. - butter, softened
2 tbsp. - vanilla
2 tbsp. - grated orange rind
1 box (16 oz.) - powdered sugar
Beat cream cheese and butter until it becomes creamy like icing should be. Add the remaining ingredients and mix well. Spread evenly onto cake.
Sour Cream Pound Cake
1/2 lb. - butter, softened
3 cups - sugar
6 egg yolks (beaten)
3 cups - all-purpose flour
Pinch of salt
1(8 oz.) carton - sour cream
1/4 tsp. - soda
6 egg whites, stiffly beaten
1 tsp. - vanilla extract
1 tsp. - almond extract
First off, you will need 3 bowls. Cream together your
butter and sugar in a small bowl. Add egg yolks. Combine flour and
salt in a separate bowl and sift together. Combine sour cream and soda
in a separate bowl. Next, add the flour mixture and the sour cream mixture
alternately to the butter and sugar mixture. It is important that you add them together alternately. This helps to make sure the mixture is well blended. Next, fold in your egg whites and
both extracts. After mixing, spoon the batter into a 10- inch greased and lightly
floured tube pan. Bake at 300 degrees for 1 1/2 hours. Enjoy.
Simple Chocolate Cake
1 1/2 cup - flour
1 cup - sugar
1 tsp. - baking soda
1 tbsp. - cocoa
1 tsp. - salt
1 tsp. - vanilla
1 tsp. - vinegar
1 cup - warm water
5 tbsp. - melted shortening
This is a very simple recipe for a basic but delicious chocolate cake. The first thing you'll need to to is sift together
flour, sugar, baking soda, cocoa, and salt in a large mixing bowl. Add vanilla, vinegar,
warm water and melted shortening. Now, mix together and bake in an 8 inch
square pan at 350 degrees for 45 minutes. Frost if you like. This is a great recipe to have in your cookbook when making other chocolate cake dishes. Enjoy.
