Easy and Simple Chili Recipe
When my children were young I never made chili. I was a pretty good cook and could make a variety of dishes, but for some reason chili intimidated me. I finally conquered my fear a few years ago when my sister came to stay with me for a week. She taught me an easy way to make it and I have changed it up to suit our family's tastes.
All you need is
1 pound of ground beef or turkey.
2 cans of chili beans.
3 cans of diced tomatoes with herbs and green chilies.
2 small cans of tomato paste-6 oz..
1 small onion, chopped.
1 tablespoon chili powder.
Brown and drain the hamburger or turkey. Transfer meat to a crock pot or large pot. Fry onions in some oil until translucent and add them to the meat. Add the chili beans, the tomatoes, tomato paste, chili powder and mix thoroughly. Let it simmer for 10 minutes or longer. Serve with cheddar cheese and sour cream. You can adjust the amount of beans, tomatoes, tomato paste, and chili powder based on what your family likes.
This is a great meal to make the night before and simmer in a crock pot on low all day. Add a salad, some bread and you have a complete meal. When I was a kid we always had to have bread with jelly and bologna with our chili. Over the years I have realized that some think that is quite odd, but I love those little family oddities.
