Easy to make, one pot, chicken fajitas
I prefer to serve fajitas unassembled with soft tortillas shredded lettuce, sour cream, salsa (see my Authentic Mexican Salsa recipe) and guacamole.
The ingredients you will need are two tomatoes julienned, one onion julienned, two poblano peppers julienned, to cloves of garlic minced, three chicken breasts cut into strips, about one tablespoon of cumin, about a teaspoon of vegatable oil and salt and pepper to taste.
Heat the vegetable oil over medium heat and add your garlic. Add your onion, and peppers with a pinch of salt. Allow them to cook just slightly before adding your tomatoes, chicken breast and cumin. Add about a teaspoon of salt to bring the juices out of your tomatoes and stir. Allow theis micture to cook stirring occasionally until your tomatoes, have broken down to form a fairly thick sauce. Adjust seasoning as needed.
Note: Instead of a poblano I will also sometimes substitute one jalapeno and one bell pepper. I also usually bake my soft flour tortillas wrapped in aluminum foil at around 350 while I am waiting for my fajita mix to finish
