Chicken Cacciatore Recipe

This is my mother's recipe for Chicken Cacciatore. Cooking this meal brings back warm memories of mom cooking away in the kitchen and the house smelling like an Italian restaurant. This bone-in chicken recipe is cooked with Italian spices and simmered in a white wine sauce. The meat is so tender it will fall off your fork. I hope you enjoy this family favorite Italian dinner.

Note: Wine is optional- if you have dietary restrictions, just skip the wine or cooking wine. This dish is full of flavor and will not taste any less delicious without it.

Definition of Chicken Cacciatore

According to Wikipedia, Cacciatore means "hunter" in Italian. "Hunter Style" means that braised chicken is prepared with onions, herbs, tomatoes, bell peppers, and sometimes wine.


Instructions for Preparing Chicken Cacciatore

  1. Rinse chicken and pat dry.
  2. Salt all sides of chicken.
  3. Heat olive oil in large skillet on medium heat.
  4. Place the chicken pieces skin side down in pan. Cook chicken in batches so you don't crowd the pan.
  5. Cook chicken until nicely browned, about five to ten minutes, then turn over and lightly brown the other side.
  6. Remove chicken to a bowl, set aside. Leave remainder of chicken fat in pan, add more olive oil if you have less than 2 tablespoons coating the pan.
  7. Add sliced onions, bell peppers and mushrooms to the pan. Increase temperature to medium high. Cook until onions are translucent and mushrooms have given up most of their moisture, stirring frequently, about 10 minutes
  8. Add garlic to pan and cook a minute more.
  9. Add white or red wine and scrape up any fat bits at bottom of the pan. Simmer wine until it is reduced by half.
  10. Add chicken broth, canned tomatoes and capers.
  11. Stir in black pepper, thyme, oregano and dash of salt (to taste). Simmer uncovered for another five minutes.
  12. Place chicken pieces on top of mushrooms, Tomatoes and onions, skin side up.
  13. Lower heat and cover skillet with lid slightly a jar.
  14. Cook chicken on a low simmer, turning and basting from time to time.
  15. Cook until chicken is tender, about 30-50 minutes.

Ingredients for Chicken Cacciatore

  • 3-4 Pounds Chicken Pieces (Trim ExcessFat), Bone-In, Skin-On
  • 3/4 Cup Chicken Broth
  • Salt, All Sides
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 (Medium) Onion, Thinly Sliced
  • 1 Red or Green Bell Pepper, Seeded and Sliced into 1/4
  • 1 Box Mushrooms, Thickly Sliced
  • 2 Garlic Cloves, (or 1 Teaspoon Ready to Use Minced Garlic in a Jar)
  • 1/3 Cup White or Red Wine
  • I (28 Ounce) Can -Plum or Diced Tomatoes, with Juice
  • 3 Tablespoons Drained Capers
  • 1/2 Teaspoon Freshly Ground Pepper
  • 1 Teaspoon Dry Thyme, (or 2 Teaspoons Fresh, Chopped Thyme)
  • 1 Teaspoon Dry Oregano, (or 2 Teaspoons Fresh, Chopped Oregano)

Hi Kevin-I'm sorry I forgot to write about the wine. Wine is optional-it just adds a little flavor but many people do not or cannot use it and that is fine. Trust me, this is such a flavorful dish that not adding the cooking wine is not going to hurt the taste one bit. Thank you kindly for coming by -Let me know if you cook this up. You are welcome Linda. Your nights are probably cold. I am more concerned with the nights than the days. I can dress warmer and move around days - but nights I just lie there. Anyway the nights in Georgia are mid 30's to low 40's.

Mmmm...that smells, er, I mean sounds good. The potatoes and the vegetables sound great but I do not eat meat - unless I could find an alternative/substitute for the beef which would not loose flavor.

Aww-you will make my mother proud-I had never used capers in a recipe before, but when I found mom's recipe for chicken cacciatore, I couldn't wait to try it. It really gives this dish extra flavor. I have heard that you can use real wine or cooking wine. I used cooking wine because I had it on hand. I am so excited you're gonna try this. Thanks-it means a lot to me and my late mother. Hi Kevin-this recipe makes enough for 4-6 people but I cooked this for sis and me and it was nice having leftovers for future lunches and dinners. We finished the left overs within the week. If I were you, I'd buy the bag of frozen chicken pieces-their smaller pieces of chicken. It's the one I used last time I made this when it was just Laura and I-her kids were off at their dad's. Go to the freezer section of the meat department and ask where they have the bag of frozen chicken pieces-It's the bag most people use when they cook up chicken wings. I would not worry about this bag being too much for you because it lasts several days in the refrigerator for left overs. Hope this helps. Have a great day my friend :-)

All I know is it says: 100% non-pareil capers imported from Spain. When I asked the grocer for capers, the grocer gave me these and didn't tell me there were two types???

Hi Linda, I browned chicken in skillet in olive oil and then heated it all in slow cooker for 4-5 hours. I forget whether I got legs or breast parts but it was Tyson frozen.

It turned out delicious. Since I was the only one eating it, the servings lasted me quite a while. I put some in the freezer and some in the fridge.

Listen, in case it does not turn out too well for you then I will tell you what I used since I used substistutes for a few.

Let me see here - my brother takes me shopping once per month - so,

- The chicken was Tyson frozen legs or thighs [I bought that]

- Instead of chicken broth or lemon juice, I used lime juice since I had that on hand.

- I shook in onion powder instead of 1 onion since I had the powder on hand.

- Instead of garlic cloves I shook in garlic powder.

- Instead of diced tomato I used about 9 oz. tomato sauce (again since that is what was on hand).

I found a recipe close to it and did it like that:

I salted chicken; heated olive oil in pan; cooked ciken until brown (5-10 min.) turned & lt. browned other side;

Removed chicken; left fat in pan; add onion powder, pepper,& mush; when onion & mush. tranluscent (about 10 min.) I added garlic cooked 1 min.;added limetom. saucestir in pepper, thyme,oregano,dash saltand simmered; lowered heat and left lid ajar;

In slow cooker put in chicken mix in rest and cook for 4-5 hours.

That is proof of a great cook. You take a recipe, use what you like or have on hand, and throw out the rest. This sounds so delicious and I love the substitutes you used for this recipe.
