Tomato and Cucumber Salad with Feta

Cooking is a pure joy for me, as it nourishes not only my body and soul, but my family's as well. While this particular recipe does not require any cooking per se, just chopping and is one of my favorite staples to have in my refrigerator at all times, and might just top your list as well!


  • 4 cups yellow or red cherry tomatoes, halved
  • 2 large cucumbers, washed, skin on, quartered and sliced
  • 1 cup yellow onions, finely chopped
  • 1 tablespoon garlic, minced
  • 1 cup tri-colored bell peppers, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup homemade pesto
  • 2-3 tablespoons extra virgin olive oil
  1. In a large bowl, combine all ingredients and mix well.
  2. Ready to eat! Refrigerate and enjoy for up to 5 days.
