Flavorful Pistachio crusted Tilapia fish.
This recipe is so flavorful and delicious- you would have no idea that this recipe is light. I have made it several times for my family- even my children devour this. If I am having a guest over I always make this recipe, and they comment every time how impressed they are.
2 cup shelled pistachios
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 teaspoon garlic powder (no garlic salt)
4-5 tilapia fish fillets
Salt and freshly ground black pepper
3 -4 Tablespoons honey mustard or Dijon mustard
1- 2 Tablespoons olive oil
1 T butter
1 Big zip lock bag
Combine pistachios, oregano, garlic powder, and thyme, in a chopper or food processor. Continue to chop until the mixture is finely chopped. Then transfer the mixture to big zip lock bag. Dust both sides of your tilapia fillets with salt and pepper. Then brush the fish with the mustard and cover both sides. Dip the freshly coated fish in the pistachio bag and coat the fish. Set the fish aside on a plate till your ready to cook.
Heat approx 1 tablespoon of the oil, and 1 Tabelspoon of butter in a large skillet over medium heat. Add the fish and cook a couple minutes per side, until the fish is flaky and fork-tender. Serve your fish with a nice side salad, or vegetable. No one would guess that you made this fancy meal, or how easy it was to make.
