Simple, fast and delicious!

This is a recipe that I make all year round but summer is always the best time to cook this recipe. I live near several farmer's markets and I change this recipe according to what is freshest and looks best when I am shopping.

This meal can be made if you are in a hurry and just want to throw together a bunch of stuff that you have on hand. I use this as a camping recipe because it can be made ahead and when you arrive at your camping spot you can throw them on the grill and have supper by the time your camp is set up.

Ingredients

  • 1 lb Ground Beef, made into 5 patties
  • 3 Carrots, sliced into rings
  • 1 head Broccoli, Cut into florets
  • 3 lbs Fingerling, Cut into halves
  • 1 Med Sweet Onion, Cut into rings
  • Fresh Herbs
  • 1 T Extra Virgin Olive Oil

  1. Mix carrots, potatoes and herbs together and drizzle with olive oil.
  2. Place hamburger patty on top of aluminum foil.
  3. Layer the onion slices and vegetables on top of the patty.
  4. Wrap loosely with foil leaving a small hole in the top of the first piece of foil.
  5. Take a second piece of foil (I use heavy duty for the second piece) and wrap it but don't wrap it too tightly just make sure you close it completely.
  6. Place your packet on the grill and cook for approximately 30 minutes or until the vegetables are fork tender.

This recipe is so versatile. You can choose any vegetables or herbs that suit your taste buds. It can be prepared ahead for a fast one dish meal anytime. You can bake it at approximately 350` for about 30 - 40 minutes if you want to cook indoors. This can also be made right over hot coals or a campfire.

I have two young daughters so I love this recipe too because I can easily change each packet according to their personal taste. One likes onions, the other doesn't. I also make one larger packet for my husband and smaller patties for the girls so that nothing has to go to waste. I tend to throw together whatever I have on hand. Garlic salt/powder, Onion powder or dried herbs will work in a pinch. This meal is delicious, healthy and won't hurt your pocketbook either!

Hey Vicki1 I have had a devil of a time with this hub! lol I am getting a warning that it contains a recipe capsule but won't appear as a recipe in search results and I can't figure out why!

I read that hub by Melovy about using a photo booth for taking food pictures and I got one! I have been messing around and taking photos of everything I can fit in it! lol

I made this earlier tonight and it is so easy and so good! The flavors really go well together and it melts in your mouth!

Great idea...I am definitely trying this! It reminds me of my time in Air Force Survival School when we cooked onions in the coals of the fire. Up to the point, I cared nothing for onions in any form. I was so hungry at that time, they were a true delicacy to my tastebuds. Today, many years later, I still enjoy cooking onions until they are soft and eating them. This recipe also reminds me somewhat of a "low-country boils" with seafood and fresh vegetable. I'll bet you could make little boils in foil using red potatoes, corn on the cob, onions, etc., let it cook a while, then add your seafood like shrimp, crawfish, or scallops...etc. Dang! Here it is 10:30 in the morning and I am hungry...thanks for that, Kelly! LOL! WB

Can you edit the ratings capsule so that it is for "recipes". This one has been a puzzle for me too. I found that if you select the 'recipe layout' when you first start the hub that it works better. But if you add the ratings capsule by itself, you have to go in there and set it for recipes.

Also - I think you meant to add the word 'potatoes' to the ingredients because I did a double take at "3 lbs Fingerling, Cut into halves" LOL!

Hey Susan - I originally only did this for camping but I love the way the FLO Ora cook together so I decided why not make them at home too?

I have a friend who used this recipe but she uses a bag of frozen mixed vegetables - it doesn't hold a candle to fresh veggies and herbs though! It can be done and it's good but this way is great!

Hi WB! Oh I can see why a cowboy would love this meal:) LOL. I do love caramelized onions. I make them for just about any kind fo burger topping. I also have a killer recipe for a rueben sandwich I make - I mix up onions, sauerkraut and apples for the topping - for corned beef on rye! Yum!

I do Frogmore stew which sounds a lot like the seafood combo you suggest and it is awesome. Now I haven't tried to do it in foil but I know it would work just like you said. I'd add the fish much later! Lol

Hy gypzeema - I thought it would be good to try a chicken breast, red pepper, green pepper and onion with a little fajita seasoning. I plan to try that and throw it in a soft shell? I don't think anyone can go wrong with this one:). I did burn them once! Lol

What a great idea for a camping take-out meal, Kelly. I love it cause it's simple and easy. Maybe you could copyright the idea. Naw, too many folks would use your idea and you would have to spend your time and money going after them.

I have a better idea. How about creatng little fire-resistant labels to be placed on the outside of each serving, e.g., onions, no onions, tomatoes, etc. They could be sold in packets and displayed in condiment sections of groceries. Whatcha think?

It's 21.30pm and reading this has made me hungry! Simple food and the way we cook them always taste and look great. We use this method to cook salmon fillets and stir fry vegetables which is also great. I use the packet idea for several meals, especially when cooking out. However I have never done it with a hamburger patty. A lot of times we do ours with salmon. It is so delicious! I am definitely going to have to try this one! Thanks for the awesome idea. I bet the kids will love making their own!

Great idea in healthy cooking. This is a great way to avoid fats, grease, and tryglicerides that come from burnt food. This is how I cook corn on the cob on a grill. I will have to try these recipes too. Excellent!

Hi Kelly - I used to put something like this together for Randy's scouting trips when he was a boy. The boys and scoutmaster all loved these foil wrapped dinners and raved about the flavor.

I love the scouts! My girls were in a troup for a few years...we only had four girls so it was a blast! I failed as a girl scout mommy - I never even sewed their patches on:) haha!

I got one of those studio photo booths and they are SO cool - they work really well - but only if you can fit your subject into that little box! Haha

When my boyscout son Randy was ask to give a talk in church about being a scout he pointed to all his badges and loudly remarked, "...and it wasn't my mom who sewed on all of these merit badges - it was me! Strawberries and pound cake? Gulp! Now that's a mouth watering favorite of mine!

Oh that's right - you are a vegetarian - well yeah you could just add more delicious vegetables - I love the way it steams them to perfection!

I've been running - like a mad woman since summer began! The kids - always needing a ride to the park - pool or a friends. Sydney has softball games and practice - I just finished putting th garden in so let the weeding begin! Lol. Oh woman, I always look forward to summer and not having a schedule - I think it sounds so lazy - I'm still waiting for a lazy day! Lol. Thanks - and I know you've been busy too huh? Presumably you could do this without the meat? I think my kids would enjoy making food this way, and I love stuff you can cook in the oven so it can be left to cook while you get on with other things - but we are veggie.

Melovy - you absolutely could! I love vegetables and could be a vegetarian myself. The potatoes steam perfectly and the onion, herbs and butter add all the flavor you really need.

I think I am going to experiment with Salmon in a foil packet tonight. I thought I would layer the fish, then potatoes, an onion slice a little spinach and a lemon slice. I bet the spinach will wilt perfectly! We shall see!
