Food Network’s Most Popular Recipes for Thanksgiving Turkey

Of the many turkey recipes on Food Network, some are quite thorough in explaining how to cook a turkey, simple and relatively unadorned. You can also learn how to brine a turkey. Some roasted turkey recipes feature stuffing, gravy, or glazes. Others feature citrus and other fruits, and a some offer something completely different. Basic Roasted Turkey
Ingredient summary: 10-12 lb turkey, unsalted butter, lemons, fresh thyme, Kosher salt, fresh ground black pepper, Spanish onion, garlic head
Directions highlights: Basting solution is made from butter, lemon juice, lemon zest, and thyme leaves. Giblets are removed, and turkey is washed and patted dry. Salt and pepper cavity, and stuff with a bundle of thyme, halved lemon, quartered onion, and garlic. Brush outside of turkey with basting solution, and sprinkle with salt and pepper. Tie legs and tuck wing tips under body. Roast about 2 ½ hours at 350 degrees. Let rest 20 minutes before slicing.
Ingredient Summary: 24 lb fresh tom turkey; tarragon, thyme, parsley, and sage leaves; butter; chopped onions, celery, carrots, apples, and oranges; salt, freshly ground black pepper.
Directions highlights: Remove giblets, wash turkey and pat dry. Gently separate skin from breast. Mix chopped herbs with softened butter and rub beneath skin to create “self basting” turkey. Fill cavity with chopped onion, celery, carrots, apples and oranges. Sprinkle turkey with salt and pepper. Place on a rack in a roasting pan. Cover with foil. Place in preheated 450 to 500 degree oven for 25 minutes. Reduce to 325 degrees for 4 hours. Remove foil last hour. Let rest 30 minutes or longer.
Brine: Salt, brown sugar, quartered oranges, quartered lemons, fresh thyme sprigs, fresh rosemary sprigs, ½ bunch sage, parsley sprigs, bay leaves, orange cut into 1/8 ths, butter, yellow onion cut in 1/8 ths, celery cut in 1” pieces, carrot cut in 1” pieces, chicken or turkey stock, salt, pepper.
Turkey Broth: vegetable oil, turkey neck and giblets, chopped carrot, chopped onion, chopped celery, bay leaf, turkey or chicken stock, water.
Gravy: turkey broth, dry white wine, butter, all purpose flour, salt, freshly ground black pepper.
10-12 lb turkey
For the Brine: Dissolve salt and sugar in cold water. Add oranges, lemons, thyme, and rosemary. Rinse turkey inside and out with cold water. Cover and soak turkey in brine in the refrigerator for 4 to 24 hours.
Roasting the Turkey: Remove turkey from brine and rinse under cold water. Pat dry inside and out. Place turkey in roasting pan. Rub with orange, then with butter. Rub butter beneath skin. Season inside cavity and outside with salt and pepper. Stuff cavity with onion, orange, celery, carrots, bay leaves, thyme, rosemary, parsley, and sage. Tie legs with string. Roast uncovered, breast side down at 325 degrees for one hour. Remove from oven, turn, baste with stock. Continue roasting breast side up about 2 hours, basting every hour. Remove and place on platter, tenting with foil. Let rest 20 minutes before carving.
For Turkey Broth: Heat oil over medium high. Add neck, heart, and gizzards and sauté about one minute. Add chopped vegetables and bay leaf and sauté about two minutes. Pour stock and water into pan and bring to boil. Simmer to reduce, about one hour. Add chopped liver to pan for last 15 minutes. Strain stock. Pull meat from neck and chop meat and giblets. Set aside.
For Pan Gravy: Pour turkey pan drippings in to measuring cup and skim off fat. Return dripping to roasting pan. Put pan on range over two burners. Add turkey broth and white wine and deglaze pan. Add remaining broth and simmer. Transfer to measuring cup. Add butter to saucepan. Whisk in flour to make roux. Add hot stock and simmer 10 minutes until thickened, whisking constantly. Add reserved neck and giblets, salt, and pepper. Pour into gravy boat to serve with sliced turkey.
