Tools You'll Need.. Besides an Appetite ;)

I'll be the first to say it. A lot of gluten-free stuff tastes foul. Especially if done incorrectly.

I've been making these pancakes for about 4 years now. Ever have the issue where your significant other likely won't eat specialty food like this? Not with this recipe! My wife eats them whenever I do.

You'll need the following:

  • A whisk
  • A medium-sized bowl
  • A measuring cup

Ingredients:

  • 1 cup of white rice flour
  • 1 tablespoon of sugar
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of coconut milk (canned is better than carton)
  • 1 egg
  • 2 teaspoons of olive oil
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla

Steps To Take

Remember: Follow the measurements exactly! If you don't they may not turn out the way they're supposed to!

Step 1
Mix the rice flour into a bowl with the sugar, baking powder, cinnamon and salt.

Step 2
Pour in your coconut milk and mix it until the lumps are gone.

Step 3
Mix in the egg, vanilla, and olive oil.

Step 4
Fry them over medium heat for about 3-5 minutes on each side.

Feel free to play around and add different ingredients to this recipe! I've used blueberries and apples before with amazing results!

It doesn't have to be difficult to enjoy good food while on a restricting diet. We already have enough pressure to eat the way that we eat. Hopefully this makes your mornings a little more pleasurable!

delicious! i used fresh ground oat flour and i added lemon zest because i ha no vanilla an it was great
