Goulash Soup or Stew

Ingrediants

2 tbsp butter

11/2 cups of chopped onion

2 cups of chopped green and red sweet peppers

2 tsp chopped garlic

1 tsp caraway seeds

2 tbsp of regular paprika or Hungarian paprika

2 tbsp soy sauce

2 tbsp flour

1 and 1/2 cups of cube potatoes

1 cup sliced cabbage (thin)

1 14 ounce can of tomatoes

4 cups of water

1 pound of beef bones

2 1/4 cups of cooked beef (left over roast beef is ideal) 3/4 inch pieces



Instuctions

Melt the butter in a large pan. Add the onion and peppers. Cook until tender but not soft or mushy. Add the caraway seeds and the garlic to the onions and peppers. Sprinkle with the paprika. Stir in soy sauce and flour. Simmer for 5-7 minutes, stirring constantly. Add potatoes, cabbage , tomatoes, water, meat and bones. Simmer 45 minutes. Remove Bones and Serve. Serves 10 people.

Dumplings

1/4 flour

1 egg

2 tbsp water

1/8 tsp of salt

Beat until smooth dough. Cover and let sit for 20 minutes. Make small balls the size of marbles and drop into soup.
