Grandma Jean's Holiday Carmel Corn
Every year for as long as I can remember one of my favorite family traditions around Christmas was my mom's carmel popcorn. The only time she would make it was during the holidays when everyone was home.......SOOOOOOO Delicious !!!! We could not stop munching it
Simple and Easy to Make
The recipe has few ingredients and is very simple to make. We use a counter top roaster because it holds a large enough volume for our family, we don't do anything small. Here is the equipment you will need:
- Candy Thermometer
- Measuring Cups
- Measuring Spoons
- Large Pot
- Wooden Spoon
- 2 Cubes Butter (please no substitutions)
- 1/2 Cup Corn Syrup
- 2 Cups Brown Sugar
- 1/2 tsp Salt
- 1/2 tsp Baking Soda
- 16 Cups of Popped Popcorn
Combine butter, corn syrup, brown sugar and salt in a large pot. Use an 8 qt. pot as the ingredients expand considerably when the baking soda is added. Combine the ingredients an let come to a boil, stirring constantly. When mixture is boiling stop stirring and let mixture reach a temperature of 1560 fahrenheit. Take mixture off the heat and add baking soda. BE PREPARED the mixture will expand rapidly! Quickly pour over popcorn and mix to coat all of the popcorn. Place on baking sheet and bake at 2500 fahrenheit for 45 minutes until coating hardens, stiring every 15 minutes. Remove from oven and let cool.
If you use a roaster the popcorn can be mixed and baked in the roaster in a one step process. Using the roaster is much less messy.
