Grandma's Pineapple Upsidedown Cake

Ingredients

  • 1 16 - 20 oz can sliced or crushed pineapple
  • 1 cup light brown sugar, firmly packed
  • 1/3 cup butter, or margarine
  • Maraschino Cherrys, cut in half
  • 1 box pineapple upsidedown cakc mix, or white/yellow cake
  • 1 envelope whipped topping mix
  • 4 eggs
  • cold water
  1. preheat oven to 350
  2. drain pineapple, reserving juice
  3. combine brown sugar and butter in 9x13 pan
  4. arrange pineapple slices in pan, cutting slices if necessary. Place cherry in center of each slice
  5. sprinkle with 2 Tablespoons of pineapple juice
  6. Combine cake mix, whipped toping, eggs & water added to pineapple juice to equal 1 cup in a large mixing bowl. Blend, then beat at med. speed for 4 minutes
  7. Pour evenly over pineapple
  8. Bake for 50 -55 minutes (40 - 45 minutes for glass pan)
  9. Cake is done when top springs back when lightly pressed or toothpick inserted into center comes out clean
  10. Invert to a serving plate and remove pan

That is awesome Timon, Congratulations!Its great to read when soneome reaches a goal like that as it gives people the encouragement that they too can reach similar goals (if they put in the effort).I've just lost my job which is a bad bad thing, but it is also good because it means now I have more time to devote to my own websites and my own goals.Well done on reaching your goal !!
