Grapefruit Mexican

This mouth watering breakfast recipe has been a favourite of mine since I was a little girl, and my dad used to make it for me on the weekends, Now I have it for breakfast occasionally, sometimes as a dessert after a lovely dinner, or just as a yummy snack on a warm evening.

Ingredients:

A halved grapefruit (one for each person).
Soft brown or demerara sugar.
One cherry (with stem) for each 1/2 grapefruit. (I didn't have any so I substituted for a grape, just to give you the idea).
If your making these for a party you could add a little tequila to the grapefruit too.

Method:

Pre-heat the grill to a medium heat.
Halve the grapefruit using a sharp knife, then cut along the edges of the segments,
this will allow the sugar to seep into the grapefruit and will make spooning it out easier too!
Next remove any pips you can see (if your adding a shot of tequila pour it over the grapefruit now) then sprinkle the grapefruit generously with the sugar (about two level tablespoons). Make sure the sugar covers the grapefruit evenly.
Place on a foiled tray and put under the grill, grill for approximately ten minutes or until the sugar melts and bubbles and the edges of the grapefruit begin to brown.
Take out of the grill, and place on a plate or bowl, put the cherry (or whatever piece of fruit you've chosen to use) in the center and serve....
