Great Northern Bean Soup

We love great northern beans. I always had them as a kid with corn bread. We always like to make them when we have leftover ham.

Some information on dry northern beans. Store dry beans in a cool, dry place off the floor. Once I open the beans I store them in a glass jar, keeps bugs away.

Store cooked beans in a covered container in the refrigerator, use within 2 days.

Before cooking dry beans check beans, go through them for small rocks or bad looking beans are discolored. Once sorted rinse in cold water.

Some people soak beans overnight. Beans will triple in size when soaked and cooked so make sure you have a big enough pot. I always use a dutch oven for my beans. I don't soak the beans, the purpose of soaking is to cut down the time for cooking. I always cook beans for hours to get all the flavor into them. Don't overcook they will turn to mush.

If you forget to soak beans fast method.

Pour boiling water over beans and soak for one hour.

Overnight soak method:

  1. Place beans in a large pot.
  2. Cover with water at least 3 inches above beans
  3. In morning drain off soaking water
  4. Add fresh water to the pot

Ingredients

  • 1 lb. great northern dry beans
  • 2 lb. box chicken broth
  • 1 cup chopped onions
  • 1 cup finely chopped carrots
  • 1 Tbsp. parsley flakes
  • 1 Left over Ham or ham bone
  • to taste salt and pepper
  • 6 cups water
  1. Rinse beans. Place in the dutch oven. Add all ingredients bring to boil and turn down burner to low, cover and cook for about 2 1/2 to 3 hours.
  2. Be sure to check beans to make sure they are not burning, stir. Add more water if need be. Near end of cooking time check the beans to make sure they are not over cooked and turning to mush.
  3. In this recipe you put as much ham as you want in it.

Southern Corn Bread

We always have cornbread with our bean soup. I make it in my cast iron skillet. I make Southern corn bread. I don't like Northern cornbread or Johnny Cake.

Recipe:

Perfect Corn Bread

1 cup flour

4 teaspoons baking powder

3/4 teaspoon salt

1 cup of yellow or white cornmeal ( Whichever you prefer)

2 eggs

1 cup milk

1/4 cup melted butter

Place all ingredients into mixing bowl beat until smooth. Pour in a skillet or a 9x9x2-inch pan. Baked at 425° for 20 to 25 minutes.

I am going to have to try this one. I am always looking for tasty ways to use beans and haven't found much aside from the typical rice and beans or chili kind of recipe. Au fait, Thanks for stopping by and for sharing. Johnny cake is what they make here not the old cornbread like I was use to. When I first came here as a new bride everyone had to make fried chicken for me. They fried their chicken and baked it for an hour in the oven. I had never seen fried chicken made that way but I never said a word they were being kind by making it for me. Merry Christmas

I love bean soup (minus the ham--I can't eat an animal that is intelligent enough to win video games played against a primate, as happened in a scientific research study) and also cornbread. I'm glad your version of cornbread is salty, not sweet, as too many people in the southern USA tend to make it. The combo of soup and cornbread is one of my favorites.

Even though it's unseasonably warm and windy here today (tornado watch as well), I think I'll make some bean soup and cornbread!

My mother made bean soup with ham or bacon in it (my dad loved it), and cornbread when I was growing up. It was cheap and filling, but she rarely made the two together. We often had 'corn meal mush,' too. We actually had 'johnny cake' more than cornbread. It's a little sweeter and a softer texture. We like the johnny cake with honey on it.

Going to share this again as we're hitting another chilly spell here in North Texas and this is a wonderful meal for weather like we're having.

It was -5 here this morning. Even though it's good in this cold country my Mom always made it when we lived in El Paso. It's one of those meals that’s cheap and stretches the food budget. With five kids in the family we ate it often. It’s also southern meal so my whole family loves it. People I know here never have it. My husbands family never made it.

Even though it has warmed up again down here in Texas (yesterday's high was 67 and to be warmer today) after a horrific ice storm, I hear things aren't so great in some parts of the country getting snow and cold weather as is normal this time of year. This bean soup and corn bread is a wonderful cold, blustery weather, meal. I recommend it to my fellow Yankees (and everyone else too). It really hits the spot after coming in from the cold weather.

This is one of my favorite types of soup and so economical to make. Your instructions are great and the recipe sounds really good, too. We also make cornbread to serve with soup. Whenever I serve a home cooked ham I usually package up a couple of zip lock containers with the leftovers and stick it in the freezer. That way I always have some to add to my soups. Well, these just look like delicious recipes! I do beans and cornbread pretty often, too. I do soak my beans because when you soak them overnight then rinse off the soak water and start with fresh water, the beans ferment a little bit and you rinse off excess starches. All this leads to better nutrition and easier digestion. Reduced cooking time is an added bonus! Voted up and helpful! ;D

I love using ham bones with some meat left on the bone when making pots of beans such as you do with your great northern beans and also in making soups like split pea and lentil soup.
