Delicious Fresh Green Bean Casserole with Roasted Garlic, Shallots and Mushrooms
Tasty Green Bean Casserole made with Heart Healthy Extra Virgin Olive Oil and Fresh Simple Ingredients
This green bean recipe is a delicious, healthier alternative to the standard green bean casserole that uses canned beans and soup. The flavors of the ingredients blend well and compliment each other for a dish that tastes fresh and flavorful. My guests rave about this side dish as I’m sure yours will too.
I use French Style Green Beans that I find at my local fresh market. Any type will do though, as long as they are fresh.
Ingredients
1 pound Fresh French Style Green Beans (rinse and snip ends if desired)
3 - 4 Cloves of Roasted Garlic chopped (see below on how to roast garlic)
3 Shallots thinly sliced
1/2 pound Button Mushrooms sliced
Approximately ¼ cup Extra Virgin Olive Oil
¼ tsp Sea Salt
¼ tsp Fresh Ground Pepper
Cooking Instructions
Preheat oven to 375.
Place beans in an 8x8 casserole dish. Then layer on the mushrooms, garlic, and shallots.
Sprinkle on the salt & pepper.
Drizzle the olive oil over the top. The whole top layer should have a thin coating of olive oil, so drizzle on a little more oil if needed.
Tightly cover the dish with foil.
Bake for 45-50 minutes. Beans should be tender, with mushrooms and shallots cooked down.
Gently stir with a large spoon to blend flavors before serving.
This dish can remain tightly covered outside of the oven for 15-20 minutes while you finish cooking the remainder of your meal.
Method for Roasting Cloves of Garlic
I usually roast only the amount of garlic I need for a recipe and use a toaster oven.
Preheat toaster oven to 375. This can also be done using a conventional oven.
Tear off a small piece of foil and make a pocket out of it. Place 3 - 4 cloves of garlic in the foil pocket. Drizzle each clove with olive oil. Seal the foil by twisting the top closed.
Bake for 20 minutes.
Let garlic cool. To remove the garlic cloves from their skin, you can simply squeeze the small or pointed end of the clove and the garlic will slide out of the other end, or you can cut the skin and peel it off the garlic clove.
