Grilled Chicken salad with strawberries and avocado

This healthy and delicious recipes takes only about 15 to 20 minutes to make and is a great choice for a light lunch or dinner and it can feed up to 6 people.

What you need to prepare this is:

Salad

2 grilled boneless and skinless chicken breasts, cut into bite-size cubes

1 1 pound container of fresh strawberries,hulled and quartered *

1 firm but ripe avocado, peeled,pitted and cubed.

3/4 cup chopped pecans (toasted)

* If fresh strawberries are not available, use frozen and let thaw in refrigerator

overnight.

1 Head of Romaine lettuce (wash and separate lettuce leaves)

Dressing

2 tbsp. orange juice

2 tbsp extra virgin olive oil

1 and 3/4 tbsp lime juice (from bottle is fine)

1/4 tsp salt.

With all the ingredients ready,all you have to do now is whisk dressing together and put salad in a large bowl. Pour dressing over the salad and toss together gently.... Serve atop a bed of romaine lettuce..... Bon Appetit !!!
