Grilled Shrimp with Cilantro Sauce

1-1/2 cups of fresh cilantro leaves
4 teas. minced gingerroot
2 garlic cloves, peeled
3 tbls. plus 1-1/2 teas. canola oil (or any kind you like)
1-1/2 teas. lemon juice
6 uncooked shell-on jumbo shrimp (1/2 lb.)
peeled and de-veined
1 teas. lemon-pepper seasoning
In a small food processor, combine cilantro,gingerroot, and garlic; cover and process until cilantro and garlic are chopped. While processing , gradually add oil and lemon juice in a steady stream until smooth. Transfer to a bowl and set aside.
Coat grill with nonstick cooking spray before starting the grill. Thread shrimp onto two metal or water soaked wooden skewers. sprinkle lemon pepper on them. Grill , uncovered, over medium heat for 5-8 minutes on each side or until shrimp turn pink. Serve with cilantro sauce.
