Quick & Healthy Cheesy Spinach Pasta


3 C chopped spinach

2 cloves garlic, minced

1 TB olive oil

1 1/2 c cooked pasta

3/4 c cottage cheese

1/4 c shredded mozzarella cheese

1/2 red bell pepper, 1/2" dice

1/2 red onion, sliced


Saute garlic. Then add spinach and cook until wilted. Add cottage cheese and mozzarella. Add pasta and heat through. In a separate pan, cook peppers and onion over low heat until tender. Add to pasta. Serves 4.
