Healthy Sandwich Recipes

These are two great recipes for sandwichs that will fill everyone and are great with soup or chips. You won't believe how delicious these taste!

Bar-B-Que Wrap

This is a family favorite that my children often request.

1 large onion, sliced

1 cup bar-b-que sauce (vegan)

6-8 large flour tortillas*

½ cup dill pickle relish

½ cup mayonnaise-type soy (Vegannaise)

1-2 flowers of broccoli, chopped fine

2-3 flowers of cauliflower, chopped fine

2-3 carrots, shredded or chopped

¼ cabbage, shredded

1 cup lettuce, shredded

1 cup alfalfa sprouts (or other sprouts)

*Note: To soften tortillas, wrap in a dishtowel and microwave for about 2 minutes.

In ½ inch of water heat onion slices until tender. Stir in bar-b-que sauce. Coat one side of the tortillas with the mayonnaise, then the pickle relish. Next, add approximately 2/3 cup of the grated vegetables in a row across the center of each tortilla. Top the vegetables with a layer of bar-b-qued onions. Over the onions put the shredded lettuce and sprouts. Tuck in one end of your tortilla and tightly roll, burrito-style. The finished wrap should have one end closed and one open with your vegetables sitting in the center. Serves 6-8

An Old Favorite

"Tuna" Sandwich (use Vegenaise for mayonnaise)

Isn’t it great that bacon lovers don’t have to give up its essence, just its fat. I was thrilled when food companies came out with an imitation bacon (found in produce or frozen breakfast section at the grocery store). Yes, you’ll notice the difference, but just enjoy your BLT with a slightly different, new flavor. This will become one of your favorite healthy sandwich recipes.

4 strips of faux bacon

2 leaves of lettuce

Tomato slices

Mayonnaise-type soy (Veganaise)

4 slices of bread, toasted

Cook bacon in microwave according to package directions. Spread one side of each slice of bread with soy mayonnaise. Assemble two sandwiches. Serves 2
