3 Delicious and healthy salmon recipes for this summer
Eating healthy doesn't mean that you have to forget about tasty food. In fact, I would dare to say that healthy dishes are even tastier. And now that summer is around the corner, what's better than a succulent grilled salmon?
These salmon recipes are just perfect for this summer. They are healthy, fresh and, most important, they're delicious!
Honey Coconut Salmon
Easy, quick and healty
This amazing recipe has it all. It's sweet, fresh, salty... I made it a few weeks ago and everyone loved it!
You can serve it with a salad of your choice or grilled potatoes but, in my opinion, the best side dish for this recipe is a spinach salad with quinoa.
Ingredients (5 salmon fillets)
- 1/2 tbsp of salt
- 1/2 tbsp of black pepper
- 1/2 tbsp of grated coconut
- 2/4 cup of olive oil
- Lemon juice (at your choice)
- 1/2 tbsp of honey
- 5 Fresh salmon fillets
Instructions
- On your blender cup add the olive oil, salt, pepper, honey, grated coconut, and the lemon juice and mix it until is homogeneous. If you prefer, you can just mix it on a cup with a spoon or a fork, but I recommend you to use a blender to make sure it is free of coconut chunks, as when you put it on the oven, or grill, they could get too much roasted and then the taste won't be that good.
- If your are using an oven instead of a grill, preheat the oven to 356 degrees (180ºC).
- Add the salmon on a baking dish or on your grill, and then spread part of the mixture over the fillets.
- Cook the salmon for 20-30 minutes, adding the rest of the mixture to make sure it doesn't lose its moisture.
- Serve it with a great salad and enjoy it!
Salmon with citrus and parsley
This is, by far, my favorite recipe. The mixed flavors of the orange and lemon together is amazing, and if you serve it with some boiled potatoes, then you have the perfect dish.
Ingredients
- 5 Fresh salmon fillets
- 1tbsp of olive oil
- 1 tsp of salt
- 1tsp of pepper
- 1 orange
- 1 lemon
- fresh parsley
Instructions
- Grate the lemon and the orange a little bit, and then squeeze them for the juice.
- Chop the parsley.
- Now, in a bowl, mix the oil with the orange and lemon juice, salt and pepper, and just a bit of the parsley and the fruits' rind, and spread a bit of the marinade over the salmon.
- Preheat the oven to 356 degrees (180ºC).
- In the meanwhile, bring water to boil with one tsp of olive oil, and boil the potatoes.
- Roast the salmon to 25 minutes.
- Serve it and spread the rest of the marinade over the roasted salmon and the potatoes.
Maple-Glazed Salmon with stir fry vegetables
This one is not only delicious but is also a very healthy and nutritional recipe. You can use all vegetables you most like
Ingredients
- 1 cup of basmati rice
- 1tsp of dijon mustard
- 1 tsp of salt
- 1 tsp of black pepper
- 1/2 of maple syrup
- A mix of vegetables at your choice. (I used red and pepper, broccoli, zucchini and carrot)
- 5 Fresh salmon fillets
- Slice the vegetables.
- If you are using the oven instead of the grill, then preheat the oven to 356 degrees (180ºC).
- Bring water to boil and cook the rice following the instructions of the package.
- Mix the maple syrup with the mustard until it is homogeneous.
- Spread part of the mixture over the salmon and roast it to 25 minutes.
- In the meantime, warm the olive oil in a pan and stir-fry the vegetables for 1 to 2 minutes with the rest of the maple mixture.
- Serve the salmon, with the vegetables and the rice.
