Hearty Healthy Lamb & Bean Soup

Ingredients
- 1kg A Grade Lamb Knuckle
- 500g Dehydrated Kidney Beans
- Half Lemon
- Teaspoon Salt
- Teaspoon Mixed Herbs
- Teaspoon Paprika
- Clove Garlic, Optional
- One Onion, Optional
- Teaspoon Barbeque Spice
- Two Potatoes, Optional
Cooking & Preparation Time
Easy to Make Soup Instructions
- If you have opted for the garlic and onions, chop both and add to a tablespoon of coconut oil in saucepan to brown
- Add lamb and brown (in own fat on low heat if you did not add onions and garlic)
- Squeeze the juice of half a lemon over the lamb as a natural meat tenderiser
- Add 1 litre of water to the slightly browned meat, coiver with pot lid and simmer for 30-40 minutes
- Add beans, another litre of water and all spices and simmer for 2 - 3 hours.
- Add last litre of water intermittently to keep soup liquid and prevent burning at base of saucepan
- Once meat is falling off the bone and beans are soft, serve!
