Hearty Winter Waffles
Ingredients
- 4 eggs, separated
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat pastry flour
- 2 cups oats
- 2 teaspoons baking powder
- 1 1/2 teaspoons dark agave
- 1 teaspoon cinnamon
- 1 1/2 cups orange juice
- In a small mixing bowl, beat egg whites until stiff and set aside. In a large mixing bowl, mix flours, oats, baking powder & cinnamon and set aside. In large mixer bowl with flat beater attachment or whisk, combine egg yolks, agave and juice. Add dry ingredients, mixing just until blended. Fold in egg whites with flat beater attachment or spatula just until combined.
- Please note: waffle batter will be very soupy. Using large cookie dough scoop or 1/3 cup, pour batter onto seasoned waffle iron and bake to desired doneness. Serve with melted butter and maple syrup. Makes approximately 12 individual waffles.
